🍰 Vegan Nut Corners

Ingredients
- 140 g ground almonds
- 400 g spelt wholemeal flour
- 200 g raw cane sugar
- salt
- 0.5 vanilla pod
- 320 g vegan margarine
- 200 g chopped almonds
- 200 g chopped hazelnuts
- 100 g coconut flakes
- 70 g dark chocolate coating
Instructions
- 1. Mix ground almonds, flour, 50 g raw cane sugar, and a pinch of salt in a bowl.
- 2. Split a vanilla pod lengthwise and scrape out the seeds with a knife.
- 3. Add the vanilla seeds and 240 g margarine to the flour mixture.
- 4. Work the ingredients into a crumbly dough.
- 5. Add about 100 ml of cold water if needed to form a firm dough.
- 6. Place the dough in the refrigerator for 30 minutes.
- 7. Bring 200 ml of water, the remaining sugar, and the scraped vanilla pod to a boil.
- 8. Let the mixture simmer for 4 to 5 minutes.
- 9. Remove the vanilla pod and take the pan off the heat.
- 10. Stir in the remaining margarine and let it melt.
- 11. Fold in nuts and coconut flakes.
- 12. Line a baking sheet with parchment paper and roll out the dough on it.
- 13. Spread the nut mixture evenly over the dough.
- 14. Bake the nut corners in the preheated oven at 180 °C (fan 160 °C, gas mark 2–3) for 30 minutes.
- 15. Allow the baked dough to cool for about 30 minutes.
- 16. Remove the dough from the baking sheet and cut it into small pieces.
- 17. Melt couverture (chocolate for decoration) in a water bath.
- 18. Decorate the nut corners with the melted couverture.
- 19. Let the decorated nut corners cool again.
