  1. 1. Pit the dates.
  2. 2. Place the pitted dates in a bowl.
  3. 3. Pour hot water over the dates.
  4. 4. Let the dates soak in the water for 10 minutes.
  5. 5. Drain the soaking water.
  6. 6. Put the almonds into a powerful blender or food processor.
  7. 7. Add the drained dates to the mixer.
  8. 8. Add a pinch of salt.
  9. 9. Blend the ingredients for about 1 minute.
  10. 10. Stop the mixer when a marzipan-like mass has formed.
  11. 11. Take one tablespoon of the dough at a time.
  12. 12. Shape the dough into small crescents.
  13. 13. Place the shaped almond croissants on a baking sheet lined with baking paper.
  14. 14. Preheat the oven to 180 °C.
  15. 15. Bake the almond croissants for 7 minutes.
  16. 16. Use convection at 160 °C or gas level 2–3 if your oven has these settings.
  17. 17. Take the almond croissants out of the oven.
  18. 18. Let the almond croissants cool down.
  19. 19. Chop the chocolate into small pieces.
  20. 20. Place a heatproof bowl over a pot of simmering water.
  21. 21. Melt the chocolate in the water bath.
  22. 22. Dip one end of an almond croissant into the melted chocolate.
  23. 23. Dip the other end of the almond croissant into the chocolate as well.
  24. 24. Place the chocolate-dipped almond croissants on a wire rack.
  25. 25. Let the chocolate set in the air.
