🍰 Vegan Almond Croissants

Ingredients
- 80 g Dates
- 150 g peeled and ground almonds
- 1 pinch Salt
- 100 g Dark chocolate
Instructions
- 1. Pit the dates.
- 2. Place the pitted dates in a bowl.
- 3. Pour hot water over the dates.
- 4. Let the dates soak in the water for 10 minutes.
- 5. Drain the soaking water.
- 6. Put the almonds into a powerful blender or food processor.
- 7. Add the drained dates to the mixer.
- 8. Add a pinch of salt.
- 9. Blend the ingredients for about 1 minute.
- 10. Stop the mixer when a marzipan-like mass has formed.
- 11. Take one tablespoon of the dough at a time.
- 12. Shape the dough into small crescents.
- 13. Place the shaped almond croissants on a baking sheet lined with baking paper.
- 14. Preheat the oven to 180 °C.
- 15. Bake the almond croissants for 7 minutes.
- 16. Use convection at 160 °C or gas level 2–3 if your oven has these settings.
- 17. Take the almond croissants out of the oven.
- 18. Let the almond croissants cool down.
- 19. Chop the chocolate into small pieces.
- 20. Place a heatproof bowl over a pot of simmering water.
- 21. Melt the chocolate in the water bath.
- 22. Dip one end of an almond croissant into the melted chocolate.
- 23. Dip the other end of the almond croissant into the chocolate as well.
- 24. Place the chocolate-dipped almond croissants on a wire rack.
- 25. Let the chocolate set in the air.
