🍰 Vegan Strawberry Muffins

Ingredients
- 220 g strawberries
- 1 vanilla pod
- 160 g fine oat flakes
- 240 g spelt flour Type 1050
- 60 g raw cane sugar
- 1 pinch salt
- 2 tsp baking powder
- 1 tsp baking soda
- 280 ml plant-based drink
- 4 tbsp vegetable oil
- 40 g apple sauce
- 1 tsp organic lemon zest
Instructions
- 1. Clean the strawberries, rinse them, pat dry, and cut into small pieces. Split the vanilla pod lengthwise and scrape out the seeds with a knife.
- 2. In a bowl, mix oats, flour, sugar, salt, baking powder, and baking soda. Then add plant-based milk, vegetable oil, applesauce, the zest of half a lemon, and the vanilla seeds, and stir until you have a smooth batter. Gently fold in the strawberry pieces.
- 3. Line a muffin tray with paper liners. Fill with the batter and bake in the preheated oven at 180 °C (fan 160 °C; gas mark 2–3) on the middle rack for about 20 minutes. Remove from the oven, let cool, and enjoy the vegan strawberry muffins.
