🍽️ Vegan Donuts

Ingredients
- 500 g Spelt flour Type 1050 (+ 1 tbsp for working)
- 2 tsp Dry yeast (4 g)
- 75 g Raw cane sugar
- 0.5 tsp Vanilla powder
- 1 pinch Salt
- 100 g soft margarine
- 250 ml lukewarm plant drink (e.g. soy)
- 1.5 l Vegetable oil for frying
- 125 g Powdered sugar (from raw cane sugar)
- 3 tbsp Lemon juice
Instructions
- 1. Mix flour, yeast, raw cane sugar, vanilla powder, and salt in a large bowl.
- 2. Add margarine in small pieces and plant-based drink to the dough.
- 3. Knead everything into a smooth dough.
- 4. Let the yeast dough rise for 60 minutes in a warm place.
- 5. Place the dough in the refrigerator for another 30 to 60 minutes.
- 6. Take the dough out of the refrigerator.
- 7. Work on a floured surface and roll the dough out to about 1 cm thick.
- 8. Cut out 18 circles using a glass (approx. 7 cm diameter).
- 9. Cut a hole in the center of each circle using a smaller glass (approx. 3 cm diameter).
- 10. Let the donuts rise covered for 30 to 60 minutes in a warm place.
- 11. Heat oil in a wide pot.
- 12. Check the temperature by holding a wooden spoon handle in the oil; bubbles should rise.
- 13. Fry the donuts in batches in the hot oil.
- 14. Let the donuts cool on a wire rack.
- 15. Sift powdered sugar into a bowl.
- 16. Add lemon juice drop by drop and stir into a thin glaze.
- 17. Brush the donuts thinly with the sugar glaze.
- 18. Let the glaze set on the wire rack.
