Ingredients
- 250 g fine bulgur (köftelik bulgur)
- 1 clove garlic
- 2 meat tomatoes
- 1 tsp salt
- 0.5 tsp cayenne pepper
- 1 tsp cumin
- 1 tsp paprika powder
- 1 pinch chili flakes
- 40 g paprika paste (3 tbsp)
- 25 g tomato paste (2 tbsp each)
- 2 spring onions
- 0.5 bunch parsley (10 g)
- 0.5 bunch mint (10 g each)
- 2 lettuce hearts
- 1 organic lemon
- 5 radishes
Instructions
- 1. Pour 250 milliliters of hot water over the bulgur.
- 2. Stir the mixture.
- 3. Let the bulgur soak for ten minutes.
- 4. Peel the garlic.
- 5. Finely chop the garlic.
- 6. Pour boiling water over the tomatoes.
- 7. Shock the tomatoes to loosen the skin.
- 8. Remove the skin of the tomatoes.
- 9. Remove the seeds of the tomatoes.
- 10. Cut the tomato flesh into fine cubes.
- 11. Add the garlic to the bulgur.
- 12. Add the diced tomatoes to the bulgur.
- 13. Add salt to the bulgur.
- 14. Add the spices to the bulgur.
- 15. Add the paprika paste to the bulgur.
- 16. Add the tomato paste to the bulgur.
- 17. Knead the ingredients vigorously for about five minutes.
- 18. Wear gloves while kneading.
- 19. Let the dough rest for twenty minutes.
- 20. Clean the spring onions.
- 21. Wash the spring onions.
- 22. Cut the spring onions into very fine rings.
- 23. Wash the parsley.
- 24. Wash the mint.
- 25. Shake the parsley and mint dry.
- 26. Finely chop the parsley.
- 27. Finely chop the mint.
- 28. Separate the lettuce leaves from the lettuce head.
- 29. Wash the lettuce leaves.
- 30. Shake the lettuce leaves dry.
- 31. Rinse the lemon with hot water.
- 32. Dry the lemon.
- 33. Halve the lemon.
- 34. Slice the lemon.
- 35. Clean the radishes.
- 36. Wash the radishes.
- 37. Cut the radishes into small cubes.
- 38. Take half of the mint.
- 39. Knead the parsley, half of the mint, and the spring onions into the dough.
- 40. Pinch off about thirty walnut-sized pieces of dough.
- 41. Press the dough pieces in your hand.
- 42. Shape elongated rolls from the dough.
- 43. Place the köfte in a lettuce leaf.
- 44. Sprinkle the köfte with the remaining mint.
- 45. Sprinkle the köfte with the radishes.
- 46. Serve the köfte with the lemon.
