  1. 1. Wash the tomatoes thoroughly under running water.
  2. 2. Quarter the tomatoes and remove the pulp containing the seeds.
  3. 3. Dice the remaining tomato flesh into small cubes.
  4. 4. Peel the cucumber and cut it in half lengthwise.
  5. 5. Scoop out the seeds from the cucumber halves using a spoon.
  6. 6. Dice the deseeded cucumber into small pieces as well.
  7. 7. Wash the pepper and remove the seeds.
  8. 8. Finely chop the pepper.
  9. 9. Peel the onion and slice it into thin strips.
  10. 10. Place the tomatoes, cucumber, pepper, and onions into a bowl.
  11. 11. Add 2 tablespoons of lemon juice, fresh cilantro, and 1 tablespoon of oil.
  12. 12. Mix everything together thoroughly.
  13. 13. Season the mixture with salt and pepper to taste.
  14. 14. Cut the avocado in half and remove the pit.
  15. 15. Peel the avocado halves.
  16. 16. Roughly puree the avocado together with the yogurt and the remaining lemon juice.
  17. 17. Season the avocado cream with salt and pepper.
  18. 18. Slice the seitan into thin pieces.
  19. 19. Heat the remaining oil in a hot pan.
  20. 20. Fry the seitan until golden brown on both sides.
  21. 21. Deglaze the seitan with 2 to 3 tablespoons of water.
  22. 22. Continue frying briefly until the water has completely evaporated.
  23. 23. Season the seitan with salt and pepper.
  24. 24. Remove the seitan from the pan and set it aside.
  25. 25. Warm the tortillas briefly in a dry pan.
  26. 26. Flip the tortillas to warm both sides.
  27. 27. Spread the avocado cream onto the tortillas.
  28. 28. Top the tortillas with the seitan.
  29. 29. Add the prepared vegetable mixture on top.
  30. 30. Fold in the sides of the tortilla.
  31. 31. Roll the tortilla up tightly.
  32. 32. Serve the burritos immediately.
