🍽️ Moist Vegan Apple Muffins

Ingredients
- 250 g Apples (2 Apples)
- 150 g Spelt whole wheat flour
- 100 g Oat flakes (fine)
- 2 tsp Baking powder
- 1 tsp Baking soda
- 3 tbsp Apple sauce
- 100 g Brown sugar
- 1 pinch Cinnamon
- 1 tbsp Vanilla sugar
- 75 ml Rapeseed oil
- 100 g Soy yogurt
- 75 ml Soy drink (Soy milk)
- 1 tbsp Coarse oat flakes
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Line a muffin tin with paper liners.
- 3. Peel the apples and grate them coarsely.
- 4. Mix the flour with the oat flakes, baking powder, and baking soda in a bowl.
- 5. Stir the apple puree with the sugar in a separate bowl until smooth.
- 6. Add the cinnamon, vanilla sugar, and oil to the apple puree mixture.
- 7. Whisk the yogurt and milk into the apple puree mixture.
- 8. Fold the dry flour mixture into the liquid mixture.
- 9. Fold the grated apples into the batter.
- 10. Distribute the batter evenly among the muffin liners.
- 11. Bake the muffins in the oven for 25 to 30 minutes.
- 12. Check for doneness with a wooden skewer, which should come out clean.
- 13. Let the muffins cool down completely after baking.
- 14. Sprinkle some oat flakes over the finished muffins.
- 15. Serve the muffins as desired.
