🍽️ Classic Vanilla Tartlets

Ingredients
- 2 sheets puff pastry (frozen)
- 1 vanilla pod
- 5 egg yolks
- 1 tsp cornstarch
- 200 ml whipping cream
- 3 tbsp sugar
- 1 untreated lemon (zested)
- 1 tbsp sugar-cinnamon mixture (for dusting)
- flour (for working)
Instructions
- 1. Let the ready-made pastry sheets thaw at room temperature.
- 2. Slice the vanilla pod lengthwise.
- 3. Scrape out the inside of the pod with a knife.
- 4. Whisk two tablespoons of cream with the cornstarch until smooth.
- 5. Add the egg yolks, vanilla seeds, remaining cream, sugar, and lemon zest to a saucepan.
- 6. Warm the mixture over low heat while stirring constantly.
- 7. Stir in the cornstarch-cream mixture and let the cream thicken.
- 8. Make sure the cream does not boil.
- 9. Remove the saucepan from the heat.
- 10. Let the cream cool down to lukewarm.
- 11. Rinse the small baking molds with cold water.
- 12. Dust some flour onto your work surface.
- 13. Roll out the pastry sheets thinly.
- 14. Cut circles from the dough that are one centimeter larger than the molds.
- 15. Place the dough circles into the prepared molds.
- 16. Fill the cooled vanilla cream into the pastry bases.
- 17. Preheat the oven to 200 degrees Celsius fan-assisted.
- 18. Bake the tartlets for about ten minutes.
- 19. Let the tartlets cool down briefly.
- 20. Dust them with cinnamon sugar while still warm or cold.
- 21. Serve the tartlets.
