🍰 Vanilla Sauce – Smarter

Ingredients
- 350 ml milk (1.5% fat)
- 3 tsp cornstarch
- 0.5 vanilla pod
- 2 tsp coconut blossom sugar
- 50 ml soy cream
- 1 very fresh egg yolk (M)
Instructions
- 1. Take three tablespoons of the milk and put them in a small bowl.
- 2. Add the cornstarch to the bowl with the milk.
- 3. Stir the mixture with a whisk until smooth and free of lumps.
- 4. Halve the vanilla pod lengthwise with a sharp knife.
- 5. Scrape the vanilla seeds out of the pod.
- 6. Put the vanilla seeds, coconut blossom sugar, and the remaining milk into a small saucepan.
- 7. Heat the mixture while stirring constantly with a whisk until it boils.
- 8. Remove the saucepan from the heat.
- 9. Stir the prepared cornstarch mixture into the hot milk.
- 10. Place the saucepan back on the stove and bring the sauce to a boil again while stirring.
- 11. Pour the finished sauce into a bowl.
- 12. Stir the soy cream into the vanilla sauce.
- 13. Separate the egg so that you have the yolk and the white separately.
- 14. Stir the egg yolk into the vanilla sauce.
- 15. Use the egg white for another purpose.
- 16. Let the sauce cool down for about 40 minutes.
