🍽️ Vanilla Pudding with Fresh Fruit Salad

Ingredients
- 2 oranges
- 2 bananas
- 1 small pomegranate
- 2 tbsp liquid honey
- 1 tbsp orange liqueur
- pulp 1/2 vanilla pods
- 300 ml milk
- 2 tbsp cornstarch
- 1 egg yolk
- mint (for garnish)
Instructions
- 1. Peel the oranges completely with a sharp knife.
- 2. Remove all white pith from the fruit.
- 3. Carefully cut out the orange segments between the membranes.
- 4. Catch the released orange juice in a bowl.
- 5. Peel the bananas.
- 6. Slice the bananas into thin rounds.
- 7. Open the pomegranate.
- 8. Extract the seeds from the shell.
- 9. Add the orange segments, banana slices, and pomegranate seeds to the bowl with the juice.
- 10. Add two tablespoons of honey to the fruits.
- 11. Add the orange liqueur.
- 12. Mix everything well together.
- 13. Let the fruit salad marinate for a short while.
- 14. Set aside two tablespoons of the milk.
- 15. Add the vanilla seeds, the remaining milk, and the rest of the honey into a pot.
- 16. Heat the mixture until it boils.
- 17. Whisk the starch with the two tablespoons of cold milk.
- 18. Mix the starch-milk mixture with the egg yolk.
- 19. Add this egg yolk mixture to the boiling vanilla milk.
- 20. Let the pudding mixture boil again.
- 21. Stir continuously until the mixture thickens.
- 22. Pour the hot pudding mixture into small molds.
- 23. Let the pudding cool down in the molds.
- 24. Unmold the chilled pudding onto plates.
- 25. Add the fruit salad.
- 26. Garnish the dish with fresh mint.
