  1. 1. Cut the vanilla pod lengthwise, scrape out the seeds and stir both into the milk. Then bring the mixture to a boil.
  2. 2. In a bowl, beat the egg yolks with the sugar until frothy, folding in the flour.
  3. 3. Slowly stir the hot milk into the egg yolk mixture, return everything to the pot, remove the vanilla pod and bring to a boil once while stirring constantly over low heat.
  4. 4. Strain the vanilla cream through a fine sieve, fill into dessert bowls and let cool. Lightly sprinkle the surface with sugar to prevent a skin from forming. Garnish with chopped nuts before serving.
