🍰 Airy Vanilla Pudding with Meringue

Ingredients
- 1 vanilla pod
- 800 ml milk
- 80 g sugar
- 3 tbsp cornstarch
- 3 eggs
- 1 pinch salt
Instructions
- 1. Weigh out all ingredients and set them aside.
- 2. Slice the vanilla pod lengthwise.
- 3. Scrape the vanilla seeds out of the pod.
- 4. Set aside about 100 milliliters of the milk.
- 5. Pour the remaining milk into a pot.
- 6. Add the vanilla pod and vanilla seeds to the pot.
- 7. Add the sugar to the pot.
- 8. Bring the milk mixture to a boil.
- 9. Pour the cold milk into a separate bowl.
- 10. Add the starch to the cold milk.
- 11. Whisk the mixture until smooth.
- 12. Pour the starch-milk mixture into the boiling milk.
- 13. Stir the mixture constantly with the whisk.
- 14. Simmer the mixture for 3 to 5 minutes.
- 15. Remove the pot from the heat when the mixture is creamy.
- 16. Separate the eggs into yolks and whites.
- 17. Stir the egg yolks into the warm pudding mixture.
- 18. Heat the mixture briefly until it simmers slightly.
- 19. Prevent the mixture from boiling.
- 20. Strain the pudding mixture through a fine sieve.
- 21. Pour the mixture into a clean bowl.
- 22. Add the salt to the egg whites.
- 23. Whip the egg whites until stiff.
- 24. Gently fold the meringue into the warm pudding.
- 25. Spoon the pudding cream into small bowls.
- 26. Rinse the bowls with cold water if you plan to unmold the pudding later.
- 27. Cover the pudding with plastic wrap.
- 28. Optionally dust the pudding with powdered sugar.
- 29. Place the pudding in the refrigerator.
- 30. Chill the pudding until serving.
