  1. 1. Weigh out all ingredients and set them aside.
  2. 2. Slice the vanilla pod lengthwise.
  3. 3. Scrape the vanilla seeds out of the pod.
  4. 4. Set aside about 100 milliliters of the milk.
  5. 5. Pour the remaining milk into a pot.
  6. 6. Add the vanilla pod and vanilla seeds to the pot.
  7. 7. Add the sugar to the pot.
  8. 8. Bring the milk mixture to a boil.
  9. 9. Pour the cold milk into a separate bowl.
  10. 10. Add the starch to the cold milk.
  11. 11. Whisk the mixture until smooth.
  12. 12. Pour the starch-milk mixture into the boiling milk.
  13. 13. Stir the mixture constantly with the whisk.
  14. 14. Simmer the mixture for 3 to 5 minutes.
  15. 15. Remove the pot from the heat when the mixture is creamy.
  16. 16. Separate the eggs into yolks and whites.
  17. 17. Stir the egg yolks into the warm pudding mixture.
  18. 18. Heat the mixture briefly until it simmers slightly.
  19. 19. Prevent the mixture from boiling.
  20. 20. Strain the pudding mixture through a fine sieve.
  21. 21. Pour the mixture into a clean bowl.
  22. 22. Add the salt to the egg whites.
  23. 23. Whip the egg whites until stiff.
  24. 24. Gently fold the meringue into the warm pudding.
  25. 25. Spoon the pudding cream into small bowls.
  26. 26. Rinse the bowls with cold water if you plan to unmold the pudding later.
  27. 27. Cover the pudding with plastic wrap.
  28. 28. Optionally dust the pudding with powdered sugar.
  29. 29. Place the pudding in the refrigerator.
  30. 30. Chill the pudding until serving.
