  2. 2. Scrape the vanilla seeds out of the pods.
  3. 3. Mix the vanilla seeds with the sugar.
  4. 4. Add the flour, soft butter, 70 grams of vanilla sugar, and the almonds to a bowl.
  5. 5. Knead the ingredients quickly into a smooth dough.
  6. 6. Shape the dough into a ball.
  7. 7. Wrap the dough ball in cling film.
  8. 8. Place the dough in the refrigerator for at least 30 minutes.
  9. 9. Shape the chilled dough into a long roll.
  10. 10. Cut the roll into 2-centimeter thick pieces.
  11. 11. Shape each piece into a small crescent or horseshoe shape.
  12. 12. Place the cookies on a baking sheet lined with baking paper.
  13. 13. Preheat the oven to 175 degrees.
  14. 14. Bake the cookies for 10 minutes.
  15. 15. Carefully loosen the warm cookies from the baking sheet.
  16. 16. Roll the cookies while still warm in the remaining sugar.
