🍽️ Creamy Vanilla Muffins

Ingredients
- 150 g Sugar
- 100 g Whipping cream
- 20 g Butter
- 1 Vanilla pod (seeds)
- 200 g Flour
- 2 tsp Baking powder
- 2 tbsp Cornstarch
- 1 Banana
- 1 pinch Salt
- 3 Eggs
- Paper baking cups
- 1 Muffin baking tray (with 12 indentations)
- Powdered sugar (for dusting)
Instructions
- 1. Place paper liners into the cups of your muffin tin.
- 2. Put 100 grams of sugar, cream, and butter into a pot.
- 3. Bring the mixture to a boil.
- 4. Stir vanilla paste into the hot mixture.
- 5. Simmer the mixture over low heat for 5 minutes.
- 6. Remove the pot from the heat and let the vanilla cream cool down until it is lukewarm.
- 7. Mix flour, baking powder, and starch in a separate bowl.
- 8. Peel the banana and mash it finely.
- 9. Whisk the banana puree with the cooled vanilla cream, the remaining sugar, and a pinch of salt.
- 10. Stir the eggs into the banana mixture.
- 11. Add the dry flour mixture and stir it in quickly until a smooth batter forms.
- 12. Fill the batter evenly into the prepared liners.
- 13. Preheat the oven to 180 degrees Celsius with fan (convection).
- 14. Place the muffin tin on the middle rack in the oven.
- 15. Bake the muffins for about 20 minutes.
- 16. Remove the tin from the oven and let the muffins cool in the tin for another 5 minutes.
- 17. Take the muffins out of the tin and place them on a wire rack.
- 18. Let the muffins cool down completely.
- 19. Dust the finished muffins with powdered sugar before serving.
