  1. 1. Slice the vanilla pods lengthwise.
  2. 2. Scrape out the vanilla seeds.
  3. 3. Mix flour, ground almonds, vanilla seeds, and sugar in a bowl.
  4. 4. Add the butter in small pieces.
  5. 5. Knead the ingredients into a crumbly mixture.
  6. 6. Rub the mixture between your palms until small crumbs form.
  7. 7. Quickly shape the dough into a smooth ball.
  8. 8. Wrap the dough ball in cling film.
  9. 9. Place the foil in the fridge for about 1 hour.
  10. 10. Divide the dough into four equal parts.
  11. 11. Work on a floured surface.
  12. 12. Shape the dough parts into rolls with a diameter of 2 to 3 cm.
  13. 13. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  14. 14. Line two baking sheets with baking paper.
  15. 15. Slice the dough rolls into pieces about 1 cm thick.
  16. 16. Shape the slices into finger-thick noodles.
  17. 17. Taper the ends of the noodles slightly.
  18. 18. Bend the noodles into small crescent shapes.
  19. 19. Place the crescents on the prepared baking sheets.
  20. 20. Bake the crescents for approx. 12 minutes until golden brown.
  21. 21. Pull the baking paper off the tray after baking.
  22. 22. Roll the still warm crescents in vanilla sugar.
  23. 23. Let the crescents cool on a wire rack.
