🍰 Real Vanilla Crescent Cookies

Ingredients
- 2 vanilla pods
- 280 g flour (+ 1 tbsp for working)
- 100 g ground almonds (peeled)
- 100 g fine sugar
- 225 g cold butter
- 2 tbsp bourbon vanilla sugar (for rolling)
Instructions
- 1. Slice the vanilla pods lengthwise.
- 2. Scrape out the vanilla seeds.
- 3. Mix flour, ground almonds, vanilla seeds, and sugar in a bowl.
- 4. Add the butter in small pieces.
- 5. Knead the ingredients into a crumbly mixture.
- 6. Rub the mixture between your palms until small crumbs form.
- 7. Quickly shape the dough into a smooth ball.
- 8. Wrap the dough ball in cling film.
- 9. Place the foil in the fridge for about 1 hour.
- 10. Divide the dough into four equal parts.
- 11. Work on a floured surface.
- 12. Shape the dough parts into rolls with a diameter of 2 to 3 cm.
- 13. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 14. Line two baking sheets with baking paper.
- 15. Slice the dough rolls into pieces about 1 cm thick.
- 16. Shape the slices into finger-thick noodles.
- 17. Taper the ends of the noodles slightly.
- 18. Bend the noodles into small crescent shapes.
- 19. Place the crescents on the prepared baking sheets.
- 20. Bake the crescents for approx. 12 minutes until golden brown.
- 21. Pull the baking paper off the tray after baking.
- 22. Roll the still warm crescents in vanilla sugar.
- 23. Let the crescents cool on a wire rack.
