  1. 1. Slice the vanilla pod lengthwise.
  2. 2. Scrape out the tiny black seeds (the pulp) from the pod.
  3. 3. Add the vanilla pods and seeds to the cream and milk mixture.
  4. 4. Heat the milk and cream mixture until it begins to boil.
  5. 5. Whisk the egg yolks together with the sugar in a bowl until creamy.
  6. 6. Stir the hot milk slowly into the egg yolk mixture.
  7. 7. Pour everything back into the saucepan.
  8. 8. Remove the vanilla pods from the liquid.
  9. 9. Continue stirring the cream over low heat with a wooden spoon.
  10. 10. Stop stirring as soon as the cream thickens.
  11. 11. Make sure the cream does not boil again.
  12. 12. Strain the vanilla cream through a fine sieve to remove any lumps.
  13. 13. Place the bowl with the cream into a bath of ice water.
  14. 14. Let the cream cool down and stir it occasionally.
  15. 15. Melt the chopped chocolate in a double boiler.
  16. 16. Let the melted chocolate cool down slightly.
  17. 17. Take about half of the cooled vanilla cream.
  18. 18. Mix the vanilla cream with the chocolate.
  19. 19. Pour the cold chocolate cream into the ice cream maker.
  20. 20. Also pour the remaining plain vanilla cream into the ice cream maker.
  21. 21. Freeze both creams until semi-firm in the machine.
  22. 22. Take the semi-firm ice cream out.
  23. 23. Place it into a bowl.
  24. 24. Swirl the ice creams together by mixing and layering them.
  25. 25. Let the ice cream freeze completely in the freezer.
  26. 26. Alternatively, pour the ice cream mixtures into shallow metal trays if you do not have an ice cream maker.
  27. 27. Let them become semi-firm in the freezer.
  28. 28. Stir the ice creams repeatedly during the first hour.
  29. 29. Take the ice creams out, place them in a bowl, and swirl them.
  30. 30. Let the ice cream freeze completely in the freezer.
  31. 31. Scoop balls out of the ice cream with an ice cream scoop for serving.
