🍽️ Vanilla Ice Cream with Blackberry Sauce

Ingredients
- Eice cream (for approx. 6 servings)
- 0.5 l Milk
- 0.25 l Whipping cream
- 1 Vanilla pod
- 7 Egg yolks
- 200 g Sugar
- 300 g Blackberries
- 75 ml dry red wine
- 1 tbsp Lemon juice
- 0.5 tsp Cinnamon
- 3 tbsp Sugar
- Blackberry leaf (for garnishing to taste)
Instructions
- 1. Slice the vanilla pod lengthwise.
- 2. Scrape out the vanilla seeds with a knife.
- 3. Add the vanilla seeds and the empty pod to the cream and milk mixture.
- 4. Bring the mixture to a boil in a pot.
- 5. Whisk the egg yolks with the sugar in a bowl until creamy.
- 6. Stir the hot milk slowly into the egg yolk mixture.
- 7. Pour everything back into the pot.
- 8. Remove the vanilla pod from the liquid.
- 9. Continue stirring the cream over low heat with a wooden spoon.
- 10. Stop stirring as soon as the cream thickens.
- 11. Make sure the cream does not boil again.
- 12. Strain the cream through a fine sieve.
- 13. Place the bowl with the cream into an ice water bath.
- 14. Let the cream cool down and stir it occasionally.
- 15. Pour the cold cream into the ice cream maker.
- 16. Freeze the ice cream according to the machine's instructions.
- 17. Alternatively, pour the cream into a shallow metal dish.
- 18. Freeze the ice cream in the freezer compartment.
- 19. Stir the ice cream repeatedly during the first hour.
- 20. Put the blackberries into a pot.
- 21. Add red wine, lemon juice, cinnamon, and sugar.
- 22. Bring the sauce to a boil briefly.
- 23. Season the sauce to taste with the spices.
- 24. Place the ice cream onto the dessert plates.
- 25. Pour the blackberry sauce over the ice cream.
- 26. Garnish the ice cream with fresh blackberry leaves.
