🍰 Vanilla Ice Cream with Berry Salad

Ingredients
- 0.5 l milk
- 0.25 l whipping cream
- 1 vanilla pod
- 7 egg yolks
- 200 g sugar
- 400 g forest berries
- 60 g black olives (pitted)
Instructions
- 1. Cut the vanilla pod lengthwise, scrape out the seeds, and stir them together with the pod into the cream-milk mixture and bring to a boil.
- 2. Whisk the egg yolks with the sugar in a bowl until frothy.
- 3. Carefully stir the hot milk into the egg yolk mixture, return everything to the pot, remove the vanilla pod, and stir with a wooden spoon over low heat until the mixture thickens, but do not let it boil.
- 4. Strain the vanilla cream through a sieve and let it cool in a bowl with ice water, stirring occasionally.
- 5. Fill the cooled cream into the ice cream maker and let it freeze.
- 6. (If you don't have an ice cream maker, fill into a shallow metal bowl and let it freeze solid in the freezer compartment, stirring several times during the first hour).
- 7. To serve, wash, clean, and sort the berries. Chop the olives and mix them with the berries. Scoop balls with an ice cream scoop and serve on wild strawberries with olives.
