🍽️ Heavenly Vanilla Ice Cream with Fresh Berries

Ingredients
- 0.5 l milk
- 0.25 l whipping cream
- 1 vanilla pod
- 7 egg yolks
- 200 g sugar
- 20 ml cognac
- strawberries (fresh)
- raspberries (fresh)
Instructions
- 1. Slice the vanilla pod lengthwise.
- 2. Scrape out the vanilla seeds with a knife.
- 3. Add the vanilla seeds and the empty pod to the cream and milk mixture.
- 4. Bring the milk and cream mixture to a boil on the stove.
- 5. Place the egg yolks and sugar in a separate bowl.
- 6. Whisk the egg yolks and sugar until creamy.
- 7. Stir the hot milk slowly into the egg yolk cream.
- 8. Pour the entire mixture back into the saucepan.
- 9. Fish out the vanilla pod from the cream and discard it.
- 10. Heat the cream over low heat while stirring constantly with a wooden spoon.
- 11. Remove the saucepan from the heat as soon as the cream thickens.
- 12. Make sure the cream does not boil again.
- 13. Strain the vanilla cream through a fine sieve into a clean bowl.
- 14. Stir the cognac into the cooled cream.
- 15. Place the bowl with the cream into a container filled with ice water.
- 16. Let the cream cool in the ice water, stirring occasionally.
- 17. Pour the cold cream into a shallow metal dish.
- 18. Cover the dish and place it in the freezer.
- 19. Alternatively, you can pour the cream into an ice cream maker and freeze it there.
- 20. Take the finished ice cream out of the freezer.
- 21. Scoop or spoon portions into small bowls.
- 22. Garnish the bowls with fresh berries.
