  1. 1. Slice the vanilla pod lengthwise.
  2. 2. Scrape out the vanilla seeds with a knife.
  3. 3. Add the vanilla seeds and the empty pod to the cream and milk mixture.
  4. 4. Bring the milk and cream mixture to a boil on the stove.
  5. 5. Place the egg yolks and sugar in a separate bowl.
  6. 6. Whisk the egg yolks and sugar until creamy.
  7. 7. Stir the hot milk slowly into the egg yolk cream.
  8. 8. Pour the entire mixture back into the saucepan.
  9. 9. Fish out the vanilla pod from the cream and discard it.
  10. 10. Heat the cream over low heat while stirring constantly with a wooden spoon.
  11. 11. Remove the saucepan from the heat as soon as the cream thickens.
  12. 12. Make sure the cream does not boil again.
  13. 13. Strain the vanilla cream through a fine sieve into a clean bowl.
  14. 14. Stir the cognac into the cooled cream.
  15. 15. Place the bowl with the cream into a container filled with ice water.
  16. 16. Let the cream cool in the ice water, stirring occasionally.
  17. 17. Pour the cold cream into a shallow metal dish.
  18. 18. Cover the dish and place it in the freezer.
  19. 19. Alternatively, you can pour the cream into an ice cream maker and freeze it there.
  20. 20. Take the finished ice cream out of the freezer.
  21. 21. Scoop or spoon portions into small bowls.
  22. 22. Garnish the bowls with fresh berries.
