🍰 Vanilla Ice Cream with Berries

Ingredients
- 0.5 l heavy cream
- 0.25 l milk
- 1 vanilla pod
- 6 egg yolks
- 200 g sugar
- 800 g strawberries
- 4 tbsp sugar
- 10 tbsp chocolate sauce
- mint
Instructions
- 1. Pour cream and milk into a pot.
- 2. Split the vanilla bean lengthwise.
- 3. Scrape out the seeds.
- 4. Add the seeds and the pod to the milk-cream mixture.
- 5. Bring the mixture to a boil.
- 6. Remove the pot from the heat and set it aside.
- 7. Place the egg yolks and sugar in a bowl.
- 8. Beat the egg yolks with sugar until frothy.
- 9. Continue stirring until the mixture is pale and creamy.
- 10. Slowly stir the hot milk into the egg yolk mixture.
- 11. Pour the entire mixture back into the pot.
- 12. Remove the vanilla pod from the liquid.
- 13. Place the pot over low heat.
- 14. Stir the cream with a wooden spoon.
- 15. Stop stirring when the cream begins to thicken.
- 16. Make sure the cream does not boil.
- 17. Place the bowl with the cream over a container of ice water.
- 18. Let the cream cool down.
- 19. Pour the cooled cream into the ice cream maker.
- 20. Set the ice cream maker and let it churn the ice cream.
- 21. If you do not have an ice cream maker, pour the mixture into a shallow metal dish.
- 22. Place the dish in the freezer compartment.
- 23. Stir the mixture vigorously several times during the first hour.
- 24. This prevents the formation of large ice crystals.
- 25. Fill the finished ice cream into silicone muffin molds.
- 26. Let the ice freeze overnight in the freezer compartment.
- 27. Wash the strawberries the next day.
- 28. Pat the strawberries dry.
- 29. Remove the green tops.
- 30. Cut the strawberries into quarters.
- 31. Mix the strawberry pieces with sugar.
- 32. Decoratively distribute 8 tablespoons of chocolate sauce on the plates.
- 33. Carefully release the ice from the silicone molds.
- 34. Place the ice portions on the plates.
- 35. Drizzle the remaining 2 tablespoons of sauce over the ice.
- 36. Add 2 tablespoons of the prepared strawberries to each serving.
- 37. Garnish the dishes with mint.
- 38. Serve the ice cream immediately.
