🍰 Vanilla Ice Cream

Ingredients
- 400 l milk
- 200 l whipping cream
- 1 vanilla pod
- 6 egg yolks
- 150 g sugar
Instructions
- 1. Split the vanilla bean lengthwise, scrape out the seeds, and stir both into the cream and milk. Then bring to a boil.
- 2. In a bowl, whisk the egg yolks with the sugar until creamy.
- 3. Pour the boiling milk mixture into the egg yolk mixture, return it to the pot, remove the vanilla bean, and stir with a wooden spoon over low heat until it thickens but does not boil.
- 4. Strain the vanilla cream through a sieve and place it in a bowl with ice water, stirring occasionally.
- 5. Pour the cooled cream into the ice cream maker and freeze.
- 6. (If you don't have an ice cream maker, fill a shallow metal dish with the mixture and freeze in the freezer, stirring several times during the first hour).
- 7. Scoop the ice cream into balls using an ice cream scoop for serving.
