  1. 1. Split the vanilla bean lengthwise, scrape out the seeds, and stir both into the cream and milk. Then bring to a boil.
  2. 2. In a bowl, whisk the egg yolks with the sugar until creamy.
  3. 3. Pour the boiling milk mixture into the egg yolk mixture, return it to the pot, remove the vanilla bean, and stir with a wooden spoon over low heat until it thickens but does not boil.
  4. 4. Strain the vanilla cream through a sieve and place it in a bowl with ice water, stirring occasionally.
  5. 5. Pour the cooled cream into the ice cream maker and freeze.
  6. 6. (If you don't have an ice cream maker, fill a shallow metal dish with the mixture and freeze in the freezer, stirring several times during the first hour).
  7. 7. Scoop the ice cream into balls using an ice cream scoop for serving.
