  1. 1. Slice the vanilla pod lengthwise.
  2. 2. Scrape out the seeds from the pod.
  3. 3. Add the seeds and the empty pod to the cream and milk mixture.
  4. 4. Bring the mixture to a boil on the stove.
  5. 5. Remove the pot from the heat.
  6. 6. Whisk the egg yolks with the sugar in a bowl until creamy.
  7. 7. Pour the hot milk slowly in a thin stream into the egg yolks.
  8. 8. Pour the entire mixture back into the pot.
  9. 9. Remove the vanilla pod from the liquid.
  10. 10. Heat the cream over low heat while stirring constantly with a wooden spoon.
  11. 11. Stop stirring as soon as the cream thickens.
  12. 12. Make sure the cream does not boil again.
  13. 13. Place the pot in a bowl filled with ice water.
  14. 14. Let the cream cool down and stir it occasionally.
  15. 15. Pour the cold cream into the ice cream maker.
  16. 16. Process the ice cream until finished.
  17. 17. If you don't have a machine, pour the cream into a shallow metal dish.
  18. 18. Freeze the ice cream in the freezer.
  19. 19. Stir the ice cream repeatedly during the first hour.
  20. 20. This recipe yields about 1 liter of ice cream.
