🍰 Creamy Vanilla Pudding with Caramelized Nuts and Fresh Berries

Ingredients
- 200 g strawberries
- 30 g sugar
- 1 tbsp butter
- 1 tbsp powdered sugar
- 60 g chopped hazelnuts
- 300 ml milk
- 1 tbsp cornstarch
- 2 tbsp vanilla sugar
- 3 egg yolks
- 100 ml whipping cream
- mint (for garnishing)
Instructions
- 1. Thoroughly wash the strawberries under running water.
- 2. Remove the green leafy tops from the strawberries.
- 3. Cut the strawberries into small, bite-sized pieces.
- 4. Sprinkle one tablespoon of sugar over the cut strawberries.
- 5. Set the sugared strawberries aside to let them macerate.
- 6. Gently heat the butter in a small pot over medium heat.
- 7. Add the powdered sugar to the warm butter.
- 8. Stir the mixture until the sugar has lightly caramelized.
- 9. Add the hazelnuts to the liquid caramel.
- 10. Toss the nuts in the caramel until they are fully coated.
- 11. Remove the nut and caramel mixture from the pot.
- 12. Spread the caramelized hazelnuts out on a plate.
- 13. Let the nuts cool down completely.
- 14. Measure out 50 milliliters of milk and set it aside.
- 15. Bring the remaining milk and sugar to a boil in a pot.
- 16. Remove the pot with the boiling milk from the heat.
- 17. Whisk the cornstarch and vanilla sugar together in a separate bowl.
- 18. Add the reserved 50 milliliters of milk to the starch and sugar mixture.
- 19. Add the egg yolks to the milk and starch mixture.
- 20. Whisk the mixture until smooth and free of lumps.
- 21. Pour the egg yolk mixture into the milk that is no longer boiling.
- 22. Gently reheat the milk and egg yolk mixture while stirring constantly.
- 23. Do not boil the pudding mixture again, just warm it up.
- 24. Continue stirring until the cream becomes thick and creamy.
- 25. Let the pudding cream cool down.
- 26. Stir the cream occasionally while it cools.
- 27. Whip the cream until stiff peaks form.
- 28. Gently fold the whipped cream into the cooled pudding cream.
- 29. Place about one tablespoon of the caramelized hazelnuts into the serving glasses.
- 30. Spread roughly half of the vanilla cream over the nuts in the glasses.
- 31. Add the remaining caramelized hazelnuts to the glasses.
- 32. Add half of the marinated strawberries to the glasses.
- 33. Cover everything with the remaining vanilla cream.
- 34. Distribute the remaining strawberries on top of the glasses.
- 35. Garnish the desserts with fresh mint leaves.
