  7. 7. Dry the lemon with a cloth.
  8. 8. Grate the lemon zest finely.
  9. 9. Squeeze the lemon juice.
  10. 10. Place the pear cubes in a pot.
  11. 11. Add the lemon juice.
  12. 12. Add the lemon zest.
  13. 13. Add the apple syrup.
  14. 14. Bring the mixture in the pot to a boil.
  15. 15. Cook the pears over medium heat.
  16. 16. Duration: 5 to 10 minutes.
  17. 17. Remove the pot from the heat.
  18. 18. Puree the pears finely with a hand blender.
  19. 19. Let the puree cool down.
  20. 20. Chill the puree.
