🍰 Vanilla Pudding with Pear Puree

Ingredients
- 400 g ripe pears (2 ripe pears)
- 0.5 organic lemon
- 2 tbsp apple syrup
- 250 ml milk (1.5% fat)
- 1 pack vanilla pudding powder
- 40 g cane sugar (2 tbsp)
- 250 ml buttermilk
- 4 tbsp lingonberries (jar; without sugar)
Instructions
- 1. Wash the pears thoroughly.
- 2. Peel the pears.
- 3. Cut the pears into quarters.
- 4. Remove the cores.
- 5. Cut the flesh into coarse cubes.
- 6. Rinse the lemon half under hot water.
- 7. Dry the lemon with a cloth.
- 8. Grate the lemon zest finely.
- 9. Squeeze the lemon juice.
- 10. Place the pear cubes in a pot.
- 11. Add the lemon juice.
- 12. Add the lemon zest.
- 13. Add the apple syrup.
- 14. Bring the mixture in the pot to a boil.
- 15. Cook the pears over medium heat.
- 16. Duration: 5 to 10 minutes.
- 17. Remove the pot from the heat.
- 18. Puree the pears finely with a hand blender.
- 19. Let the puree cool down.
- 20. Chill the puree.
- 21. Take 5 tablespoons of milk.
- 22. Add the pudding powder.
- 23. Add the sugar.
- 24. Stir the mixture until smooth.
- 25. Heat the remaining milk in a second pot.
- 26. Stir the prepared pudding mixture into the hot milk.
- 27. Boil the mixture while stirring constantly.
- 28. Duration: 1 minute.
- 29. Pour the pudding into a bowl.
- 30. Let the pudding cool down.
- 31. Stir the pudding repeatedly while cooling.
- 32. This prevents a skin from forming.
- 33. Stir in the buttermilk with a whisk.
- 34. Layer the pudding and pear puree into 4 glasses.
- 35. Add 1 tablespoon of cranberries on top of each.
- 36. Serve the dessert.
