  1. 1. Soak the gelatin in cold water for five minutes.
  2. 2. Slice the vanilla pod lengthwise and scrape out the seeds.
  3. 3. Whisk the vanilla seeds, egg yolks, 60 grams of sugar, a pinch of salt, and one tablespoon of rum in a bowl until thick.
  4. 4. Slowly heat the milk together with the empty vanilla pod.
  5. 5. Remove the vanilla pods from the milk.
  6. 6. Beat the cream into the egg mixture gradually.
  7. 7. Squeeze the soaked gelatin lightly.
  8. 8. Dissolve the gelatin together with the remaining rum over moderate heat.
  9. 9. Stir the dissolved gelatin into the cream.
  10. 10. Chill the mixture until it begins to set.
  11. 11. Test the mixture after about 40 minutes.
  12. 12. Continue cooling and check every five to ten minutes to see if the mixture is still liquid.
  13. 13. Toast the coconut flakes until light brown.
  14. 14. Pour the toasted coconut flakes onto a plate.
  15. 15. Chop the pistachios.
  16. 16. Squeeze the lime.
  17. 17. Mix the lime juice with the remaining sugar.
  18. 18. Peel the oranges and grapefruit thickly.
  19. 19. Segment the citrus fruits.
  20. 20. Set aside some segments for garnishing.
  21. 21. Mix the remaining fruit with the lime juice.
  22. 22. Whip the cream until stiff.
  23. 23. Fold the whipped cream into the cream mixture.
  24. 24. Place the citrus fruits into glasses.
  25. 25. Sprinkle the fruit with the coconut flakes.
  26. 26. Distribute the cream on top.
  27. 27. Decorate the cream with the citrus fruits.
  28. 28. Sprinkle the cream with the pistachios.
  29. 29. Garnish with orange zest if desired.
