🍰 Vanilla Rice Pudding with Plum-Apple Compote

Ingredients
- 0.5 vanilla pod
- 500 ml milk (1.5% fat)
- salt
- 4 tbsp honey
- 150 g ORYZA (organic milk rice)
- 1 apple
- 300 g plums
- 100 ml plum juice (or apple juice)
- 1 star anise
- 2 cloves
- 0.5 cinnamon stick
- 1 tsp cornstarch
- 20 g dark chocolate (min. 70% cocoa)
Instructions
- 1. Slice the vanilla bean lengthwise.
- 2. Scrape out the seeds with a knife.
- 3. Place the milk, vanilla seeds, the empty pod, a pinch of salt, and 2 tablespoons of honey in a pot.
- 4. Add the organic rice.
- 5. Bring the mixture to a boil while stirring occasionally.
- 6. Cook the rice in a covered pot over low heat for 20 minutes.
- 7. Stir the rice once after 10 minutes.
- 8. Stir the rice well after 20 minutes.
- 9. Turn off the heat.
- 10. Let the rice pudding sit for 5 to 10 minutes on residual heat.
- 11. Peel the apple and remove the core.
- 12. Dice the apple.
- 13. Wash the plums.
- 14. Halve the plums and remove the pits.
- 15. Combine the apple and plums with the remaining honey, 80 ml of plum juice, star anise, cloves, and a cinnamon stick in a pot.
- 16. Simmer the fruit covered for about 5 minutes over low heat until soft.
- 17. Mix the cornstarch with the remaining juice until smooth.
- 18. Stir the starch mixture into the fruit.
- 19. Simmer the compote for another 3 minutes until it thickens slightly.
- 20. Remove the pot from the heat.
- 21. Remove the spices from the compote.
- 22. Let the compote cool for 15 minutes.
- 23. Grate the chocolate.
- 24. Stir the rice pudding again.
- 25. Serve the rice pudding in bowls.
- 26. Add the compote.
- 27. Sprinkle the dish with the grated chocolate.
