  1. 1. Slice the vanilla bean lengthwise.
  2. 2. Scrape out the seeds with a knife.
  3. 3. Place the milk, vanilla seeds, the empty pod, a pinch of salt, and 2 tablespoons of honey in a pot.
  4. 4. Add the organic rice.
  5. 5. Bring the mixture to a boil while stirring occasionally.
  6. 6. Cook the rice in a covered pot over low heat for 20 minutes.
  7. 7. Stir the rice once after 10 minutes.
  8. 8. Stir the rice well after 20 minutes.
  9. 9. Turn off the heat.
  10. 10. Let the rice pudding sit for 5 to 10 minutes on residual heat.
  11. 11. Peel the apple and remove the core.
  12. 12. Dice the apple.
  13. 13. Wash the plums.
  14. 14. Halve the plums and remove the pits.
  15. 15. Combine the apple and plums with the remaining honey, 80 ml of plum juice, star anise, cloves, and a cinnamon stick in a pot.
  16. 16. Simmer the fruit covered for about 5 minutes over low heat until soft.
  17. 17. Mix the cornstarch with the remaining juice until smooth.
  18. 18. Stir the starch mixture into the fruit.
  19. 19. Simmer the compote for another 3 minutes until it thickens slightly.
  20. 20. Remove the pot from the heat.
  21. 21. Remove the spices from the compote.
  22. 22. Let the compote cool for 15 minutes.
  23. 23. Grate the chocolate.
  24. 24. Stir the rice pudding again.
  25. 25. Serve the rice pudding in bowls.
  26. 26. Add the compote.
  27. 27. Sprinkle the dish with the grated chocolate.
