🍰 Vanilla-Almond Cream with Fresh Mango Sauce

Ingredients
- 30 g cornstarch
- 500 ml milk
- 1 vanilla pod
- 25 g sugar
- 1 pinch salt
- 40 g almond butter
- 1 ripe mango
- juice of 1 lime
- lemon balm (for garnish)
Instructions
- 1. Whisk the cornstarch into a small amount of cold milk until smooth.
- 2. Pour the remaining milk into a saucepan.
- 3. Slice the vanilla pod lengthwise and scrape the seeds into the milk using a knife.
- 4. Add the empty vanilla pod, sugar, and salt to the milk.
- 5. Bring the milk to a boil.
- 6. Stir the cornstarch mixture into the boiling milk.
- 7. Bring the cream back to a boil while stirring continuously.
- 8. Stir the almond paste into the hot cream.
- 9. Whisk the cream vigorously with a whisk until smooth and creamy.
- 10. Pour the cream into glasses.
- 11. Allow the cream to cool down completely.
- 12. Slice thin strips from the mango and set them aside for garnishing.
- 13. Peel the remaining mango and cut the flesh away from the fibrous pit.
- 14. Puree the mango flesh together with the lime juice to make a sauce.
- 15. Spoon the mango sauce over the cooled cream.
- 16. Garnish the plates with the prepared mango strips and fresh lemon balm.
