  1. 1. Whisk the cornstarch into a small amount of cold milk until smooth.
  2. 2. Pour the remaining milk into a saucepan.
  3. 3. Slice the vanilla pod lengthwise and scrape the seeds into the milk using a knife.
  4. 4. Add the empty vanilla pod, sugar, and salt to the milk.
  5. 5. Bring the milk to a boil.
  6. 6. Stir the cornstarch mixture into the boiling milk.
  7. 7. Bring the cream back to a boil while stirring continuously.
  8. 8. Stir the almond paste into the hot cream.
  9. 9. Whisk the cream vigorously with a whisk until smooth and creamy.
  10. 10. Pour the cream into glasses.
  11. 11. Allow the cream to cool down completely.
  12. 12. Slice thin strips from the mango and set them aside for garnishing.
  13. 13. Peel the remaining mango and cut the flesh away from the fibrous pit.
  14. 14. Puree the mango flesh together with the lime juice to make a sauce.
  15. 15. Spoon the mango sauce over the cooled cream.
  16. 16. Garnish the plates with the prepared mango strips and fresh lemon balm.
