🍰 Vanilla Coconut Rice Pudding with Mango

Ingredients
- 2 vanilla pods
- 600 ml coconut milk
- 10 g ginger
- 4 tbsp cane sugar
- 150 g milk rice
- 2 mangoes
Instructions
- 1. Slice the vanilla pods lengthwise.
- 2. Scrape out the seeds from the pods.
- 3. Place the vanilla seeds and the empty pods into a pot.
- 4. Pour the coconut milk into the pot.
- 5. Peel the ginger.
- 6. Slice the ginger into thin rounds.
- 7. Add the ginger slices and sugar to the pot.
- 8. Bring the milk mixture to a boil.
- 9. Sprinkle the rice into the boiling liquid.
- 10. Reduce the heat to a low setting.
- 11. Place the lid on the pot so it is half-covered.
- 12. Let the rice simmer for approx. 25 minutes.
- 13. Stir the rice occasionally.
- 14. Peel the mangoes all around using a vegetable peeler.
- 15. Slice the flesh away from the pit.
- 16. Cut the mango flesh into strips.
- 17. Sweeten the finished rice pudding to taste with sugar.
- 18. Serve the rice topped with the mango strips.
- 19. Garnish the dish with vanilla pods if desired.
