  1. 1. Slice the vanilla pods lengthwise.
  2. 2. Scrape out the seeds from the pods.
  3. 3. Place the vanilla seeds and the empty pods into a pot.
  4. 4. Pour the coconut milk into the pot.
  5. 5. Peel the ginger.
  6. 6. Slice the ginger into thin rounds.
  7. 7. Add the ginger slices and sugar to the pot.
  8. 8. Bring the milk mixture to a boil.
  9. 9. Sprinkle the rice into the boiling liquid.
  10. 10. Reduce the heat to a low setting.
  11. 11. Place the lid on the pot so it is half-covered.
  12. 12. Let the rice simmer for approx. 25 minutes.
  13. 13. Stir the rice occasionally.
  14. 14. Peel the mangoes all around using a vegetable peeler.
  15. 15. Slice the flesh away from the pit.
  16. 16. Cut the mango flesh into strips.
  17. 17. Sweeten the finished rice pudding to taste with sugar.
  18. 18. Serve the rice topped with the mango strips.
  19. 19. Garnish the dish with vanilla pods if desired.
