  1. 1. Wash the apples thoroughly.
  2. 2. Cut the apples into eight wedges and remove the core.
  3. 3. Add the honey, 4 tablespoons of water, cinnamon, and the apple wedges to a pot.
  4. 4. Bring the mixture to a boil once.
  5. 5. Reduce the heat and let the apples simmer gently for 4 to 5 minutes.
  6. 6. Slice the vanilla pod lengthwise with a sharp knife.
  7. 7. Scrape the vanilla seeds out of the pod.
  8. 8. Add the milk, the vanilla seeds, and a pinch of salt to another pot.
  9. 9. Bring the milk mixture to a boil.
  10. 10. Mix the semolina with the raw cane sugar in a separate bowl.
  11. 11. Slowly stir the semolina-sugar mixture into the hot milk while whisking continuously.
  12. 12. Bring the pudding back to a boil.
  13. 13. Remove the pot from the heat.
  14. 14. Let the semolina pudding swell covered for 4 minutes.
  15. 15. Finely chop the walnut kernels.
  16. 16. Stir the semolina pudding well after it has swollen.
  17. 17. Fill the pudding into individual bowls.
  18. 18. Top with the stewed apples and the chopped nuts.
  19. 19. Garnish the dish with fresh lemon balm leaves if desired.
  20. 20. Serve the semolina pudding warm.
