🍳 Creamy Vanilla Semolina Pudding with Stewed Apples

Ingredients
- 400 g red-skinned firm apples (2 red-skinned firm apples)
- 1 tbsp honey
- 1 tsp cinnamon
- 1 vanilla pod
- 400 ml milk (1.5% fat)
- 1 pinch salt
- 50 g wheat whole grain semolina
- 1 tbsp cane sugar
- 40 g walnut kernels
- lemon balm (to taste)
Instructions
- 1. Wash the apples thoroughly.
- 2. Cut the apples into eight wedges and remove the core.
- 3. Add the honey, 4 tablespoons of water, cinnamon, and the apple wedges to a pot.
- 4. Bring the mixture to a boil once.
- 5. Reduce the heat and let the apples simmer gently for 4 to 5 minutes.
- 6. Slice the vanilla pod lengthwise with a sharp knife.
- 7. Scrape the vanilla seeds out of the pod.
- 8. Add the milk, the vanilla seeds, and a pinch of salt to another pot.
- 9. Bring the milk mixture to a boil.
- 10. Mix the semolina with the raw cane sugar in a separate bowl.
- 11. Slowly stir the semolina-sugar mixture into the hot milk while whisking continuously.
- 12. Bring the pudding back to a boil.
- 13. Remove the pot from the heat.
- 14. Let the semolina pudding swell covered for 4 minutes.
- 15. Finely chop the walnut kernels.
- 16. Stir the semolina pudding well after it has swollen.
- 17. Fill the pudding into individual bowls.
- 18. Top with the stewed apples and the chopped nuts.
- 19. Garnish the dish with fresh lemon balm leaves if desired.
- 20. Serve the semolina pudding warm.
