  1. 1. Whisk the eggs and sugar in a bowl until the mixture is pale and voluminous.
  2. 2. Scrape the seeds from the vanilla pod and stir them into the egg mixture along with the salt.
  3. 3. Mix the flour and baking powder in a separate bowl.
  4. 4. Add the flour mixture and the milk to the egg mixture.
  5. 5. Stir everything with a spoon or whisk until you have a smooth batter without lumps.
  6. 6. Cover the bowl and place the batter in the refrigerator for about 30 minutes.
  7. 7. Peel the apples and cut them into quarters.
  8. 8. Cut the apple quarters into thin slices.
  9. 9. Grate the lemon zest and squeeze the juice.
  10. 10. Toss the apple slices with the lemon zest and lemon juice.
  11. 11. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  12. 12. Grease a pie dish (a round baking dish) with some fat.
  13. 13. Dust the dish with the breadcrumbs to prevent the batter from sticking.
  14. 14. Take the batter out of the refrigerator and stir it briefly.
  15. 15. Pour about one-third of the batter into the prepared dish.
  16. 16. Distribute the apple pieces evenly over the batter in the dish.
  17. 17. Press the apples slightly into the batter.
  18. 18. Pour the remaining batter over the apples.
  19. 19. Bake the clafoutis in the oven for 30 to 40 minutes until golden brown.
  20. 20. Let the clafoutis cool down slightly in the oven or on the counter.
  21. 21. Dust the finished pastry with powdered sugar to taste.
