🍽️ Vanilla Apple Clafoutis

Ingredients
- 4 Eggs
- 100 g Sugar
- 1 Vanilla pod
- 1 Pinch Salt
- 80 g Flour
- 1 tsp Baking powder
- 150 ml Milk
- 600 g small Apples
- 1 Lemon (organic)
- Butter (for the pan)
- Breadcrumbs (for the pan)
- Icing sugar (for dusting)
Instructions
- 1. Whisk the eggs and sugar in a bowl until the mixture is pale and voluminous.
- 2. Scrape the seeds from the vanilla pod and stir them into the egg mixture along with the salt.
- 3. Mix the flour and baking powder in a separate bowl.
- 4. Add the flour mixture and the milk to the egg mixture.
- 5. Stir everything with a spoon or whisk until you have a smooth batter without lumps.
- 6. Cover the bowl and place the batter in the refrigerator for about 30 minutes.
- 7. Peel the apples and cut them into quarters.
- 8. Cut the apple quarters into thin slices.
- 9. Grate the lemon zest and squeeze the juice.
- 10. Toss the apple slices with the lemon zest and lemon juice.
- 11. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 12. Grease a pie dish (a round baking dish) with some fat.
- 13. Dust the dish with the breadcrumbs to prevent the batter from sticking.
- 14. Take the batter out of the refrigerator and stir it briefly.
- 15. Pour about one-third of the batter into the prepared dish.
- 16. Distribute the apple pieces evenly over the batter in the dish.
- 17. Press the apples slightly into the batter.
- 18. Pour the remaining batter over the apples.
- 19. Bake the clafoutis in the oven for 30 to 40 minutes until golden brown.
- 20. Let the clafoutis cool down slightly in the oven or on the counter.
- 21. Dust the finished pastry with powdered sugar to taste.
- 22. Serve the clafoutis warm or at room temperature.
