  1. 1. Toast the sesame seeds in a small pan without oil until they are golden brown.
  2. 2. Take the toasted sesame seeds out of the pan and place them on a plate.
  3. 3. Let the sesame seeds cool completely on the plate.
  4. 4. Rinse the cucumber under running water.
  5. 5. Dry the cucumber with a kitchen towel.
  6. 6. Cut the cucumber in half lengthwise.
  7. 7. Scrape the seeds out of the cucumber halves with a spoon.
  8. 8. Cut the deseeded cucumber halves into sticks about half a centimeter thick.
  9. 9. Peel the skin off the avocado quarters.
  10. 10. Cut the peeled avocado quarters into long strips.
  11. 11. Drizzle the avocado strips with lemon juice immediately to prevent them from turning brown.
  12. 12. Rinse the lettuce leaves under running water.
  13. 13. Dry the lettuce leaves with a kitchen towel.
  14. 14. Take a spoonful of mayonnaise from the specified amount.
  15. 15. Spread a thin layer of mayonnaise on a lettuce leaf.
  16. 16. Roll the coated lettuce leaf tightly into a roll.
  17. 17. Repeat this with the remaining lettuce leaves and mayonnaise.
  18. 18. Take a bamboo sushi rolling mat.
  19. 19. Wrap the bamboo mat tightly with cling film.
  20. 20. Place a nori seaweed sheet with the smooth side facing up on the wrapped mat.
  21. 21. Moisten your hands with a little water so the rice does not stick.
  22. 22. Take half of the sushi rice amount.
  23. 23. Spread the rice evenly over the nori sheet.
  24. 24. Leave a small border free on both long sides, at the top and bottom.
  25. 25. Carefully lift the nori sheet from the mat.
  26. 26. Turn the sheet over so that the rice is now facing down on the mat.
  27. 27. Take some of the remaining mayonnaise.
  28. 28. Spread the mayonnaise on the lower third of the nori sheet.
  29. 29. Place half of the lettuce rolls on the mayonnaise-coated area.
  30. 30. Place the avocado strips next to the lettuce rolls.
  31. 31. Place the cucumber sticks next to the avocado strips.
  32. 32. Lift the bottom edge of the bamboo mat.
  33. 33. Roll the filling and the nori sheet tightly together.
  34. 34. Press the roll slightly with the mat to stabilize the shape.
  35. 35. Take the finished roll off the mat.
  36. 36. Repeat the filling and rolling with the remaining ingredients for a second roll.
  37. 37. Take the cooled sesame seeds.
  38. 38. Gently press the sushi rolls into the sesame seeds so they are covered all around.
  39. 39. Take a sharp knife.
  40. 40. Cut the first roll into six equal pieces.
  41. 41. Cut the second roll into six equal pieces as well.
