  1. 1. Cut the surimi sticks in half lengthwise.
  2. 2. Cut the cucumber in half lengthwise.
  3. 3. Remove the seeds from the cucumber.
  4. 4. Cut the cucumber halves into sticks about 0.5 cm thick.
  5. 5. Peel the avocado.
  6. 6. Cut the avocado into strips lengthwise.
  7. 7. Drizzle the avocado strips with lemon juice immediately.
  8. 8. Wrap the sushi rolling mat in cling film.
  9. 9. Place a half sheet of nori on the mat with the smooth side facing up.
  10. 10. Spread one quarter of the sushi rice onto the nori sheet.
  11. 11. Press the rice down lightly.
  12. 12. Carefully flip the sheet so the rice is now on the cling film.
  13. 13. Spread some wasabi on the bottom third of the nori sheet.
  14. 14. Place one quarter of the surimi sticks on the wasabi.
  15. 15. Place the cucumber sticks next to the surimi sticks.
  16. 16. Place the avocado strips next to the other ingredients.
  17. 17. Roll the sushi roll tightly using the mat.
  18. 18. Form three more rolls with the remaining ingredients.
  19. 19. Cut each sushi roll into 6 equal pieces.
  20. 20. Coat each piece in trout roe.
