🍽️ Crispy Baked Pork Schnitzel with Vegetables

Ingredients
- 4 pork schnitzels (approx. 180 g each)
- flour
- butter
- 4 tomatoes
- 200 g Emmental (sliced)
- salt
- black pepper (freshly ground)
- 500 g mixed vegetables (peas, carrots, asparagus, etc., from the freezer)
Instructions
- 1. Preheat your oven to 200 degrees Celsius.
- 2. Gently flatten the pork schnitzels using a meat mallet or the back of a knife.
- 3. Season the schnitzels on both sides with salt and pepper.
- 4. Lightly dust the schnitzels with flour and shake off any excess.
- 5. Heat butter in a large frying pan.
- 6. Fry the schnitzels in the hot butter for 2 to 3 minutes on each side until golden brown.
- 7. Place the vegetables in a pot and heat them up.
- 8. Toss the warm vegetables in a little butter.
- 9. Season the vegetables with salt and pepper to finish.
- 10. Slice the tomatoes into thin rounds.
- 11. Place the fried schnitzels onto an ovenproof baking dish.
- 12. Layer the schnitzels alternately with slices of cheese and tomato.
- 13. Sprinkle freshly ground pepper over the topped schnitzels.
- 14. Place the baking dish into the preheated oven.
- 15. Bake the dish for a few minutes until the cheese is melted and golden brown.
- 16. Remove the baking dish from the oven and serve the schnitzel together with the warm vegetables.
