  1. 1. Rinse the schnitzels under running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Cut each schnitzel in half to create two flat pieces.
  4. 4. Season all sides of the meat evenly with salt and pepper.
  5. 5. Heat oil in a large frying pan over medium-high heat.
  6. 6. Fry the meat pieces in batches, searing each side for about 1 to 2 minutes.
  7. 7. Place the seared meat pieces on a baking rack lined with parchment paper.
  8. 8. Place one slice of pineapple on each piece of meat.
  9. 9. Generously sprinkle grated cheese over the pineapple slices.
  10. 10. Preheat the oven to 220 degrees Celsius with top heat only.
  11. 11. Slide the baking rack into the oven and bake the schnitzels for about 5 minutes until the cheese is melted.
  12. 12. Remove the schnitzels from the oven and sprinkle them with ground pink pepper.
  13. 13. Garnish the dish with fresh frisée leaves before serving.
