  1. 1. Preheat the oven to 200 degrees Celsius with top heat.
  2. 2. Peel the bottom third of the asparagus spears.
  3. 3. Bring water with salt to a boil.
  4. 4. Place the asparagus into the boiling water.
  5. 5. Cook the asparagus over low heat for about 10 minutes.
  6. 6. Remove the asparagus from the water and rinse it with cold water.
  7. 7. Drain the asparagus well.
  8. 8. Wrap each asparagus spear in a slice of prosciutto.
  9. 9. Place the asparagus spears side by side in a fireproof baking dish.
  10. 10. Sprinkle ground pepper over the asparagus.
  11. 11. Mix the parmesan with 4 tablespoons of olive oil.
  12. 12. Drizzle the mixture over the asparagus.
  13. 13. Place the dish on the middle rack in the oven.
  14. 14. Gratin the asparagus for 6 to 8 minutes.
  15. 15. Wash the arugula and remove tough stems.
  16. 16. Arrange the arugula on plates.
  17. 17. Drizzle the arugula with the remaining olive oil and vinegar.
  18. 18. Season the arugula with salt and pepper.
  19. 19. Place the gratinated asparagus on top of the arugula.
  20. 20. Serve the dish immediately.
