🍽️ Baked Asparagus Wrapped in Prosciutto

Ingredients
- 2 bunches green asparagus
- 16 slices Parma ham
- 1 handful arugula
- 4 tbsp freshly grated Parmesan
- 8 tbsp olive oil
- 3 tbsp white wine vinegar
- salt
- pepper (from the mill)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top heat.
- 2. Peel the bottom third of the asparagus spears.
- 3. Bring water with salt to a boil.
- 4. Place the asparagus into the boiling water.
- 5. Cook the asparagus over low heat for about 10 minutes.
- 6. Remove the asparagus from the water and rinse it with cold water.
- 7. Drain the asparagus well.
- 8. Wrap each asparagus spear in a slice of prosciutto.
- 9. Place the asparagus spears side by side in a fireproof baking dish.
- 10. Sprinkle ground pepper over the asparagus.
- 11. Mix the parmesan with 4 tablespoons of olive oil.
- 12. Drizzle the mixture over the asparagus.
- 13. Place the dish on the middle rack in the oven.
- 14. Gratin the asparagus for 6 to 8 minutes.
- 15. Wash the arugula and remove tough stems.
- 16. Arrange the arugula on plates.
- 17. Drizzle the arugula with the remaining olive oil and vinegar.
- 18. Season the arugula with salt and pepper.
- 19. Place the gratinated asparagus on top of the arugula.
- 20. Serve the dish immediately.
