🍽️ Baked Peach Toast

Ingredients
- 30 g arugula (0.5 bunch)
- 300 g pork tenderloin
- salt
- pepper
- 300 g peaches (3 peaches)
- 160 g tomatoes (2 tomatoes)
- 50 g Italian hard cheese (e.g. Grana Padano)
- 75 g cream cheese (13 % fat)
- 120 g whole wheat toast (4 slices)
Instructions
- 1. Wash the arugula thoroughly.
- 2. Spin-dry the arugula.
- 3. Remove the thick stems from the arugula.
- 4. Finely chop the arugula leaves.
- 5. Place the chopped leaves on a flat plate.
- 6. Remove any skins and sinews from the pork tenderloin.
- 7. Rinse the pork tenderloin.
- 8. Pat the meat dry with kitchen paper.
- 9. Season the pork tenderloin with salt and pepper.
- 10. Press the meat into the chopped arugula leaves.
- 11. Turn the meat over.
- 12. Press the leaves firmly onto the other side as well.
- 13. Wrap the meat tightly in plastic wrap.
- 14. Then wrap the package in a large piece of aluminum foil.
- 15. Twist the ends of the foil like a candy wrapper.
- 16. Bring water to a boil in a large pot.
- 17. Place the tenderloin package into the boiling water.
- 18. Cook the tenderloin covered on low heat for 12 to 15 minutes.
- 19. Remove the tenderloin from the water.
- 20. Let the meat cool down slightly.
- 21. Score the peaches in a cross pattern.
- 22. Pour boiling water over the peaches.
- 23. Peel the skin off the peaches.
- 24. Cut the peaches into wedges from the stone.
- 25. Wash the tomatoes.
- 26. Cut out the stem areas of the tomatoes in a wedge shape.
- 27. Slice the tomato flesh into thin slices.
- 28. Grate the hard cheese finely.
- 29. Mix the grated cheese with the cream cheese.
- 30. Toast the bread in the toaster.
- 31. Place the toast on a baking sheet lined with baking paper.
- 32. Unwrap the pork tenderloin from the foils.
- 33. Slice the tenderloin into thin slices.
- 34. Top the toast with the tomato slices.
- 35. Season the tomatoes with salt and pepper.
- 36. Distribute the meat over the toasts.
- 37. Distribute the peaches over the toasts.
- 38. Take a teaspoon.
- 39. Spread the cheese mixture over the toasts.
- 40. Preheat the oven to 225 degrees Celsius.
- 41. Set the oven to fan mode at 200 degrees Celsius.
- 42. Set the oven to Gas Mark 4.
- 43. Place the toasts on the top rack.
- 44. Bake the toasts for 10 to 12 minutes.
