  1. 1. Preheat the oven to 180 degrees Celsius (160 degrees with fan or gas mark 2-3).
  2. 2. Wash the leek thoroughly and remove the tough ends.
  3. 3. Cut the leek lengthwise into halves or thirds.
  4. 4. Boil water with salt and add the leek for 2 to 3 minutes. This is called blanching (briefly cooking in boiling water).
  5. 5. Drain the water and immediately rinse the leek with cold water to stop the cooking process.
  6. 6. Wrap 1 to 2 slices of ham around the leek pieces.
  7. 7. Place the wrapped leek pieces into a baking dish.
  8. 8. Whisk together cream, broth, crème fraîche, eggs, and grated cheese in a bowl.
  9. 9. Season the mixture with salt, pepper, and ground nutmeg.
  10. 10. Pour the sauce evenly over the leek in the dish.
  11. 11. Bake the dish for 25 to 30 minutes in the oven until golden brown.
  12. 12. Serve the bake garnished with fresh chervil.
