🍽️ Crispy Kohlrabi Gratin

Ingredients
- 500 g large kohlrabi (1 large kohlrabi)
- salt
- 2 sprigs parsley
- 2 sprigs thyme
- 1 sprig rosemary
- 4 tbsp breadcrumbs
- 2 tbsp olive oil
- 1 tsp grainy mustard
- 1 tsp liquid honey
- pepper
- 0.5 tsp soft butter
Instructions
- 1. Wash the kohlrabi thoroughly.
- 2. Peel off the hard outer skin.
- 3. Set aside the green leaves.
- 4. Slice the kohlrabi into round discs.
- 5. Cut the discs into sticks about one centimeter thick.
- 6. Bring plenty of water to a boil.
- 7. Add some salt to the water.
- 8. Boil the kohlrabi sticks for five minutes.
- 9. Fill a bowl with cold water.
- 10. Add a few ice cubes.
- 11. Drain the kohlrabi.
- 12. Immediately plunge the kohlrabi into the ice water.
- 13. Let the kohlrabi drain well.
- 14. Wash the fresh herbs.
- 15. Shake the herbs dry.
- 16. Pluck the leaves off the stems.
- 17. Finely chop the herbs.
- 18. Finely chop the saved kohlrabi greens as well.
- 19. Put the chopped greens into a bowl.
- 20. Add breadcrumbs to the bowl.
- 21. Add olive oil.
- 22. Add mustard.
- 23. Add honey.
- 24. Season with a little salt.
- 25. Season with a little pepper.
- 26. Mix all ingredients well together.
- 27. Grease a baking dish with butter.
- 28. Place the kohlrabi in the dish.
- 29. Sprinkle the breadcrumb mixture over the top.
- 30. Preheat the oven to 200 degrees Celsius.
- 31. Bake the kohlrabi for 15 to 20 minutes.
- 32. Take the gratin out of the oven.
- 33. Serve the dish warm.
