  1. 1. Wash the kohlrabi thoroughly.
  2. 2. Peel off the hard outer skin.
  3. 3. Set aside the green leaves.
  4. 4. Slice the kohlrabi into round discs.
  5. 5. Cut the discs into sticks about one centimeter thick.
  6. 6. Bring plenty of water to a boil.
  7. 7. Add some salt to the water.
  8. 8. Boil the kohlrabi sticks for five minutes.
  9. 9. Fill a bowl with cold water.
  10. 10. Add a few ice cubes.
  11. 11. Drain the kohlrabi.
  12. 12. Immediately plunge the kohlrabi into the ice water.
  13. 13. Let the kohlrabi drain well.
  14. 14. Wash the fresh herbs.
  15. 15. Shake the herbs dry.
  16. 16. Pluck the leaves off the stems.
  17. 17. Finely chop the herbs.
  18. 18. Finely chop the saved kohlrabi greens as well.
  19. 19. Put the chopped greens into a bowl.
  20. 20. Add breadcrumbs to the bowl.
  21. 21. Add olive oil.
  22. 22. Add mustard.
  23. 23. Add honey.
  24. 24. Season with a little salt.
