🍽️ Green Asparagus with Mascarpone Topping

Ingredients
- 800 g green asparagus
- salt
- 200 g mascarpone
- 2 eggs
- pepper
- 1 piece parmesan (approx. 50 g, 30% fat in dry matter)
Instructions
- 1. Wash the green asparagus thoroughly.
- 2. Peel the bottom third of the stalks.
- 3. Cut off the woody ends.
- 4. Bring water to a boil and add salt.
- 5. Cook the asparagus for about 5 minutes.
- 6. Drain the asparagus.
- 7. Shock the asparagus with cold water.
- 8. Let the asparagus drain well.
- 9. Place the asparagus stalks in an ovenproof pan or baking dish.
- 10. Stir the mascarpone with the eggs until smooth.
- 11. Season the mixture with pepper and a pinch of salt.
- 12. Spread the mascarpone mixture evenly over the asparagus.
- 13. Grate the Parmesan finely.
- 14. Sprinkle the grated Parmesan over the asparagus.
- 15. Preheat the oven to 200 °C (180 °C fan or gas mark 3).
- 16. Bake the asparagus for about 20 minutes until golden brown.
