  1. 1. Wash the green asparagus thoroughly.
  2. 2. Peel the bottom third of the stalks.
  3. 3. Cut off the woody ends.
  4. 4. Bring water to a boil and add salt.
  5. 5. Cook the asparagus for about 5 minutes.
  6. 6. Drain the asparagus.
  7. 7. Shock the asparagus with cold water.
  8. 8. Let the asparagus drain well.
  9. 9. Place the asparagus stalks in an ovenproof pan or baking dish.
  10. 10. Stir the mascarpone with the eggs until smooth.
  11. 11. Season the mixture with pepper and a pinch of salt.
  12. 12. Spread the mascarpone mixture evenly over the asparagus.
  13. 13. Grate the Parmesan finely.
  14. 14. Sprinkle the grated Parmesan over the asparagus.
  15. 15. Preheat the oven to 200 °C (180 °C fan or gas mark 3).
  16. 16. Bake the asparagus for about 20 minutes until golden brown.
