🍽️ Fish gratin with creamy spinach

Ingredients
- 1 organic lemon
- 600 g red cod fillet (or cod)
- salt
- pepper
- 600 g leaf spinach
- 1 onion
- 1 tbsp olive oil
- 150 g crème fraîche
- 30 g parmesan
Instructions
- 1. Wash the lemon under hot water and dry it.
- 2. Finely grate the lemon zest and squeeze out the juice.
- 3. Season the fish fillets with some of the lemon juice, salt, and pepper.
- 4. Let the seasoned fillets rest for a moment.
- 5. Wash the spinach thoroughly and spin it dry.
- 6. Chop the spinach roughly if the leaves are large.
- 7. Peel the onion and cut it into fine cubes.
- 8. Heat olive oil in a large pan.
- 9. Sauté the onion cubes until they are translucent.
- 10. Add the spinach leaves to the pan.
- 11. Cook the spinach for 2 to 3 minutes.
- 12. Season the mixture with the lemon zest, remaining lemon juice, salt, and pepper.
- 13. Stir the crème fraîche into the spinach mixture.
- 14. Place the fish fillets in a baking dish.
- 15. Distribute the creamy spinach mixture evenly over the fillets.
- 16. Grate Parmesan cheese over the top.
- 17. Preheat the oven to 200 °C (convection 180 °C, gas mark 3).
- 18. Bake the dish in the oven for about 12 minutes.
- 19. Serve the fish with saffron rice or boiled potatoes.
