  2. 2. Finely grate the lemon zest and squeeze out the juice.
  3. 3. Season the fish fillets with some of the lemon juice, salt, and pepper.
  4. 4. Let the seasoned fillets rest for a moment.
  5. 5. Wash the spinach thoroughly and spin it dry.
  6. 6. Chop the spinach roughly if the leaves are large.
  7. 7. Peel the onion and cut it into fine cubes.
  8. 8. Heat olive oil in a large pan.
  9. 9. Sauté the onion cubes until they are translucent.
  10. 10. Add the spinach leaves to the pan.
  11. 11. Cook the spinach for 2 to 3 minutes.
  12. 12. Season the mixture with the lemon zest, remaining lemon juice, salt, and pepper.
  13. 13. Stir the crème fraîche into the spinach mixture.
  14. 14. Place the fish fillets in a baking dish.
  15. 15. Distribute the creamy spinach mixture evenly over the fillets.
  16. 16. Grate Parmesan cheese over the top.
  17. 17. Preheat the oven to 200 °C (convection 180 °C, gas mark 3).
  18. 18. Bake the dish in the oven for about 12 minutes.
  19. 19. Serve the fish with saffron rice or boiled potatoes.
