🍽️ Oven Tortilla Folds with Tomatoes and Spicy Salsa

Ingredients
- 4 wheat tortillas (homemade or store-bought)
- 3 tbsp olive oil
- 1 spring onion
- 2 garlic cloves
- 200 g cream cheese
- 2 tbsp parmesan
- 2 tbsp crème fraîche
- salt
- pepper (coarsely ground)
- 1 pinch cumin
- 1 pinch cayenne pepper
- 5 tomatoes
- 1 sprig cilantro
- 750 g beefsteak tomatoes
- 2 onions
- 2 chili peppers
- 1 lime (juice)
- cilantro leaves (for garnish)
- salt (pepper)
Instructions
- 1. Line a baking tray with baking paper.
- 2. Place the tortillas on the prepared tray.
- 3. Wash the spring onions.
- 4. Cut the green parts of the spring onions into thin rings.
- 5. Set the onion rings aside.
- 6. Peel the garlic.
- 7. Chop the white part of the spring onions finely.
- 8. Put the peeled garlic into a blender.
- 9. Add the chopped white onion part to the blender.
- 10. Add the cream cheese to the blender.
- 11. Add the Parmesan to the blender.
- 12. Add the Creme Fraiche to the blender.
- 13. Blend the ingredients in the blender until smooth.
- 14. Season the cream with salt.
- 15. Season the cream with pepper.
- 16. Season the cream with cumin.
- 17. Season the cream with cayenne pepper.
- 18. Wash the tomatoes thoroughly under running water.
- 19. Slice the tomatoes.
- 20. Spread the cheese cream evenly over each tortilla.
- 21. Place two tomato slices on each tortilla.
- 22. Drizzle the remaining olive oil over the tortillas.
- 23. Season the tortillas with salt.
- 24. Season the tortillas with pepper.
- 25. Preheat the oven to 200 degrees.
- 26. Place the tray in the preheated oven.
- 27. Bake the tortillas for about 10 minutes.
- 28. Remove the tray from the oven.
- 29. Sprinkle the green onion rings over the tortillas.
- 30. Decorate the tortillas with fresh coriander.
- 31. Put the tomatoes for the salsa into a bowl.
- 32. Pour boiling water over the tomatoes.
- 33. Let the tomatoes sit for a short time.
- 34. Peel the skin off the tomatoes.
- 35. Remove the seeds from the tomatoes.
- 36. Cut the tomato flesh into small cubes.
- 37. Peel the onions for the salsa.
- 38. Finely chop the onions.
- 39. Seed the chilies.
- 40. Cut the chilies finely.
- 41. Add the chopped chilies to the tomato cubes.
- 42. Squeeze lime juice over the tomato-chili mixture.
- 43. Mix the ingredients well together.
- 44. Finely chop the coriander for the salsa.
- 45. Stir the chopped coriander into the salsa.
- 46. Season the salsa with salt.
- 47. Season the salsa with pepper.
- 48. Serve the salsa as desired with the tortillas.
