🍽️ Baked Cheese Spätzle – smarter

Ingredients
- 150 g Spelt flour Type 1050
- 2 Eggs
- 150 ml Milk (1.5% fat)
- Salt
- Pepper
- Nutmeg
- 4 Onions
- 1 tbsp Rapeseed oil
- 1 heaped tbsp Butter
- 1 heaped tbsp Hazelnut kernels
- 3 sprigs Parsley
- 2 sprigs Sage
- 75 g Alpine cheese (1 piece)
Instructions
- 1. Put flour, eggs, and milk into a bowl.
- 2. Stir the mixture until smooth.
- 3. Season the dough with salt and pepper.
- 4. Grate some nutmeg into the mixture if you like.
- 5. Beat the dough with a wooden spoon until it is smooth and elastic.
- 6. Continue beating for about two to three minutes.
- 7. Wait until the dough starts to form small bubbles.
- 8. Let the dough rest for 45 to 60 minutes.
- 9. Peel the onions in the meantime.
- 10. Dice the onions finely.
- 11. Heat oil and butter in a pan.
- 12. Fry the onions until golden brown, stirring occasionally.
- 13. Remove the onions from the pan and set them aside.
- 14. Chop the hazelnuts coarsely.
- 15. Roast the nuts in a pan without any fat.
- 16. Wash the parsley and sage.
- 17. Shake the herbs dry.
- 18. Pluck the leaves off the stems.
- 19. Chop the herbs coarsely.
- 20. Grate the cheese using a grater.
- 21. Bring plenty of salted water to a boil in a large pot.
- 22. Beat the dough again before cooking.
- 23. Press the dough in portions through a spätzle press into the boiling water.
- 24. Alternatively, use a potato masher.
- 25. Cook the spätzle for one to two minutes.
- 26. Remove the cooked spätzle with a slotted spoon.
- 27. Rinse the spätzle immediately under cold water.
- 28. Let the spätzle drain well in a sieve.
- 29. Repeat the process until all the dough is used.
- 30. Mix the spätzle with the onions, nuts, and herbs.
- 31. Season the mixture with salt and pepper.
- 32. Fold in half of the cheese.
- 33. Transfer the mixture into a baking dish.
- 34. Sprinkle the remaining cheese over the spätzle.
- 35. Preheat the oven to 180 degrees Celsius.
- 36. Use fan-assisted heat at 160 degrees or gas mark 2 to 3.
- 37. Bake the cheese spätzle for 15 minutes.
