  1. 1. Put flour, eggs, and milk into a bowl.

  3. 3. Season the dough with salt and pepper.
  4. 4. Grate some nutmeg into the mixture if you like.
  5. 5. Beat the dough with a wooden spoon until it is smooth and elastic.
  6. 6. Continue beating for about two to three minutes.
  7. 7. Wait until the dough starts to form small bubbles.
  8. 8. Let the dough rest for 45 to 60 minutes.
  9. 9. Peel the onions in the meantime.
  10. 10. Dice the onions finely.
  11. 11. Heat oil and butter in a pan.
  12. 12. Fry the onions until golden brown, stirring occasionally.
  13. 13. Remove the onions from the pan and set them aside.
  14. 14. Chop the hazelnuts coarsely.
  15. 15. Roast the nuts in a pan without any fat.
  16. 16. Wash the parsley and sage.
  17. 17. Shake the herbs dry.
  18. 18. Pluck the leaves off the stems.

  20. 20. Grate the cheese using a grater.

  23. 23. Press the dough in portions through a spätzle press into the boiling water.

  25. 25. Cook the spätzle for one to two minutes.
  26. 26. Remove the cooked spätzle with a slotted spoon.
  27. 27. Rinse the spätzle immediately under cold water.
  28. 28. Let the spätzle drain well in a sieve.
  29. 29. Repeat the process until all the dough is used.
  30. 30. Mix the spätzle with the onions, nuts, and herbs.
  31. 31. Season the mixture with salt and pepper.
  32. 32. Fold in half of the cheese.
  33. 33. Transfer the mixture into a baking dish.
  34. 34. Sprinkle the remaining cheese over the spätzle.
  35. 35. Preheat the oven to 180 degrees Celsius.
  36. 36. Use fan-assisted heat at 160 degrees or gas mark 2 to 3.
  37. 37. Bake the cheese spätzle for 15 minutes.
