🍽️ Grilled Scallops with Passion Fruit and Parmesan Hearts

Ingredients
- 6 tbsp freshly grated Parmesan
- 3 ripe passion fruits
- 8 scallops (kitchen-ready, shelled)
- salt
- colorful pepper
- 8 tsp freshly grated Parmesan
- 2 chicory
- 2 unwaxed oranges
- 4 tbsp olive oil
- pepper (from the mill)
- 4 slices toast bread (toasted)
Instructions
- 1. Switch the oven to the grill setting and preheat it.
- 2. Line a baking tray with baking paper.
- 3. Place a heart-shaped cookie cutter on the tray.
- 4. Fill the cutter thinly with grated Parmesan cheese.
- 5. Carefully lift the cutter upwards to keep the heart shape.
- 6. Repeat this process three times so that you have four cheese hearts.
- 7. Place the tray in the preheated oven and melt the cheese for 2 to 3 minutes.
- 8. Remove the finished cheese hearts and let them cool down.
- 9. Cut the passion fruits in half.
- 10. Scrape out the pulp with the seeds.
- 11. Wash the scallops and pat them dry.
- 12. Season the scallops with salt and crushed mixed pepper.
- 13. Drizzle about one tablespoon of passion fruit pulp onto each scallop.
- 14. Sprinkle one teaspoon of Parmesan on top of each.
- 15. Place the scallops in the hot oven and grill them for 4 to 5 minutes.
- 16. Separate the leaves from the chicory head.
- 17. Wash the leaves, remove any damaged parts, and shake them dry.
- 18. Peel the oranges and remove the white pith as well.
- 19. Carefully separate the fruit segments from the membranes.
- 20. Catch the released orange juice in a bowl.
- 21. Whisk the olive oil with two tablespoons of the collected orange juice and the remaining passion fruit pulp.
- 22. Season the dressing mixture with salt and pepper.
- 23. Toss the chicory leaves with the orange segments and the dressing.
- 24. Arrange the salad on plates or in small bowls.
- 25. Garnish the grilled scallops with one of the Parmesan hearts each.
- 26. Serve the scallops together with the salad and toast points.
