  1. 1. Switch the oven to the grill setting and preheat it.
  2. 2. Line a baking tray with baking paper.
  3. 3. Place a heart-shaped cookie cutter on the tray.
  4. 4. Fill the cutter thinly with grated Parmesan cheese.
  5. 5. Carefully lift the cutter upwards to keep the heart shape.
  6. 6. Repeat this process three times so that you have four cheese hearts.
  7. 7. Place the tray in the preheated oven and melt the cheese for 2 to 3 minutes.
  8. 8. Remove the finished cheese hearts and let them cool down.
  9. 9. Cut the passion fruits in half.
  10. 10. Scrape out the pulp with the seeds.
  11. 11. Wash the scallops and pat them dry.
  12. 12. Season the scallops with salt and crushed mixed pepper.
  13. 13. Drizzle about one tablespoon of passion fruit pulp onto each scallop.
  14. 14. Sprinkle one teaspoon of Parmesan on top of each.
  15. 15. Place the scallops in the hot oven and grill them for 4 to 5 minutes.
  16. 16. Separate the leaves from the chicory head.
  17. 17. Wash the leaves, remove any damaged parts, and shake them dry.
  18. 18. Peel the oranges and remove the white pith as well.
  19. 19. Carefully separate the fruit segments from the membranes.
  20. 20. Catch the released orange juice in a bowl.
  21. 21. Whisk the olive oil with two tablespoons of the collected orange juice and the remaining passion fruit pulp.
  22. 22. Season the dressing mixture with salt and pepper.
  23. 23. Toss the chicory leaves with the orange segments and the dressing.
  24. 24. Arrange the salad on plates or in small bowls.
  25. 25. Garnish the grilled scallops with one of the Parmesan hearts each.
  26. 26. Serve the scallops together with the salad and toast points.
