  1. 1. Carefully open the scallop shells.
  2. 2. Remove the scallop meat using a small spoon or fork.
  3. 3. Remove any remaining bits and clean the meat.
  4. 4. Place the prepared meat back into the empty shells.
  5. 5. Arrange the ten scallops on a suitable baking dish or individual plates.
  6. 6. Wash the spring onions under running water.
  7. 7. Remove the dry ends at the roots.
  8. 8. Cut the green part of the onions into very fine rings.
  9. 9. Finely chop the white part of the onions.
  10. 10. Put the grape juice into a small bowl.
  11. 11. Stir the curry powder into the juice.
  12. 12. Add the soft butter.
  13. 13. Mix everything into a smooth paste.
  14. 14. Fold the grated Parmesan into the curry-butter mixture.
  15. 15. Add the finely chopped white onion parts to the mixture.
  16. 16. Spread the curry mixture evenly over each scallop meat.
  17. 17. Top with the fine green onion rings.
  18. 18. Set the oven to the grill function.
  19. 19. Preheat the oven until it is hot.
  20. 20. Sprinkle the breadcrumbs over the prepared scallops.
  21. 21. Place the dish into the hot oven.
  22. 22. Gratin the scallops for about two minutes.
  23. 23. Make sure the breadcrumbs turn golden brown.
  24. 24. Carefully remove the dish from the oven.
  25. 25. Garnish the dishes with some fresh green.
  26. 26. Serve the scallops immediately while hot.
