🍽️ Gratinated Scallops with Curry Crunch

Ingredients
- 12 scallops
- 1 spring onion
- 75 ml light grape juice
- 1 tsp curry powder
- 2 tbsp soft butter
- 4 tbsp grated parmesan
- pepper (from the mill)
- 2 tbsp whole wheat breadcrumbs
- 1 tbsp freshly chopped parsley
Instructions
- 1. Carefully open the scallop shells.
- 2. Remove the scallop meat using a small spoon or fork.
- 3. Remove any remaining bits and clean the meat.
- 4. Place the prepared meat back into the empty shells.
- 5. Arrange the ten scallops on a suitable baking dish or individual plates.
- 6. Wash the spring onions under running water.
- 7. Remove the dry ends at the roots.
- 8. Cut the green part of the onions into very fine rings.
- 9. Finely chop the white part of the onions.
- 10. Put the grape juice into a small bowl.
- 11. Stir the curry powder into the juice.
- 12. Add the soft butter.
- 13. Mix everything into a smooth paste.
- 14. Fold the grated Parmesan into the curry-butter mixture.
- 15. Add the finely chopped white onion parts to the mixture.
- 16. Spread the curry mixture evenly over each scallop meat.
- 17. Top with the fine green onion rings.
- 18. Set the oven to the grill function.
- 19. Preheat the oven until it is hot.
- 20. Sprinkle the breadcrumbs over the prepared scallops.
- 21. Place the dish into the hot oven.
- 22. Gratin the scallops for about two minutes.
- 23. Make sure the breadcrumbs turn golden brown.
- 24. Carefully remove the dish from the oven.
- 25. Garnish the dishes with some fresh green.
- 26. Serve the scallops immediately while hot.
