🍽️ Crispy Shrimp Gratin

Ingredients
- 1 large onion
- 2 tbsp parsley and oregano (freshly chopped)
- 100 g feta cheese (cubed)
- 200 g small shrimp (or crab)
- 1 kg tomatoes (peeled, deseeded and diced)
- 1 slice toasted toast bread (cubed)
- 50 g parmesan (freshly grated)
- 3 tbsp olive oil
- 125 ml white wine
- 2 garlic cloves
- salt
- pepper (from the mill)
Instructions
- 1. Cut the onion into wedges and chop them into small pieces.
- 2. Rinse the shrimp under cold water.
- 3. Crush the toast cubes and the garlic in a food processor or with a hand blender.
- 4. Mix the crumbs with the grated Parmesan and two tablespoons of olive oil to form a mixture.
- 5. Turn on the grill function of your oven.
- 6. Fry the onion pieces in some oil.
- 7. Add the diced tomatoes and let them simmer briefly.
- 8. Stir the fresh herbs and the crumbled goat cheese into the tomato-onion mixture.
- 9. Season the filling to taste with salt and pepper.
- 10. Distribute the vegetable filling evenly among four ovenproof dishes.
- 11. Place the drained shrimp on top of the filling.
- 12. Generously sprinkle the prepared cheese-crumb mixture over everything.
- 13. Place the dishes on the middle rack and bake under the hot grill for a few minutes until the surface is golden brown.
