  1. 1. Cut the onion into wedges and chop them into small pieces.
  2. 2. Rinse the shrimp under cold water.
  3. 3. Crush the toast cubes and the garlic in a food processor or with a hand blender.
  4. 4. Mix the crumbs with the grated Parmesan and two tablespoons of olive oil to form a mixture.
  5. 5. Turn on the grill function of your oven.
  6. 6. Fry the onion pieces in some oil.
  7. 7. Add the diced tomatoes and let them simmer briefly.
  8. 8. Stir the fresh herbs and the crumbled goat cheese into the tomato-onion mixture.
  9. 9. Season the filling to taste with salt and pepper.
  10. 10. Distribute the vegetable filling evenly among four ovenproof dishes.
  11. 11. Place the drained shrimp on top of the filling.
  12. 12. Generously sprinkle the prepared cheese-crumb mixture over everything.
  13. 13. Place the dishes on the middle rack and bake under the hot grill for a few minutes until the surface is golden brown.
