  6. 6. Let the strawberries drain on kitchen paper.
  7. 7. Pat the strawberries dry thoroughly.
  8. 8. Remove the green stems from the strawberries.
  9. 9. Take about one-third of the strawberries and cut them into quarters.
  10. 10. Place the quartered strawberries into a tall container.
  11. 11. Puree the strawberries finely with a hand blender.
  12. 12. Stir vanilla powder into the strawberry puree.
  13. 13. Stir cayenne pepper into the strawberry puree.
  14. 14. Slice the remaining strawberries into thin slices.

  33. 33. Gently fold the stiff egg white into the quark mixture.
  34. 34. Distribute the quark foam evenly over the fruit in the baking dishes.
  35. 35. Sprinkle almond flakes over the casseroles.
  36. 36. Preheat the oven to 225 degrees Celsius (convection: 200 degrees Celsius, gas: setting 3 to 4).
