🍽️ Golden-Baked Strawberry Quark Casserole with Lemon

Ingredients
- 0.5 small organic lemon
- 500 g strawberries
- 1 tsp vanilla powder
- 1 pinch cayenne pepper
- 1 banana
- 1 egg
- salt
- 2 tbsp coconut blossom sugar
- 100 g low-fat quark
- 50 ml soy cream
- 1 tbsp sliced almonds
Instructions
- 1. Halve the lemon and rinse it under running water.
- 2. Dry the lemon half with a cloth.
- 3. Finely grate the zest of the lemon half.
- 4. Squeeze the juice from the lemon half.
- 5. Gently wash the strawberries in a bowl with water.
- 6. Let the strawberries drain on kitchen paper.
- 7. Pat the strawberries dry thoroughly.
- 8. Remove the green stems from the strawberries.
- 9. Take about one-third of the strawberries and cut them into quarters.
- 10. Place the quartered strawberries into a tall container.
- 11. Puree the strawberries finely with a hand blender.
- 12. Stir vanilla powder into the strawberry puree.
- 13. Stir cayenne pepper into the strawberry puree.
- 14. Slice the remaining strawberries into thin slices.
- 15. Peel the banana.
- 16. Slice the banana into thin slices.
- 17. Place the strawberry slices and banana slices into a bowl.
- 18. Add one tablespoon of lemon juice to the fruit.
- 19. Gently mix the fruit and lemon juice in the bowl.
- 20. Distribute the fruit mixture onto four small shallow baking dishes.
- 21. Place the strawberry puree on top of the fruit in the baking dishes.
- 22. Separate the egg so that you have egg white and egg yolk separately.
- 23. Place the egg white into a tall container.
- 24. Add a pinch of salt to the egg white.
- 25. Whisk the egg white with the beaters of the hand mixer until stiff peaks form.
- 26. Place the egg yolk into a bowl.
- 27. Add coconut blossom sugar to the egg yolk.
- 28. Whisk the egg yolk and sugar until frothy.
- 29. Stir quark (a type of fresh cheese) into the egg yolk and sugar mixture.
- 30. Stir soy cream into the quark mixture.
- 31. Season the quark mixture with the grated lemon zest.
- 32. Add one tablespoon of lemon juice to the quark mixture.
- 33. Gently fold the stiff egg white into the quark mixture.
- 34. Distribute the quark foam evenly over the fruit in the baking dishes.
- 35. Sprinkle almond flakes over the casseroles.
- 36. Preheat the oven to 225 degrees Celsius (convection: 200 degrees Celsius, gas: setting 3 to 4).
- 37. Bake the casseroles in the preheated oven for 6 to 8 minutes until golden brown.
