  2. 2. Remove the core of the apples using a corer.
  3. 3. Slice the apples into thin rounds.
  4. 4. Toss the apple slices with lemon juice immediately to prevent browning.
  5. 5. Slice the beetroot into thin rounds as well.
  6. 6. Mix the oil with the vinegar in a small bowl.
  7. 7. Season the mixture with salt and pepper to taste.
  8. 8. Take four slices of beetroot and stack them on top of each other on a plate.
  9. 9. Sprinkle crumbled feta cheese over the beetroot layers.
  10. 10. Cover the cheese layer with four apple slices.
  11. 11. Repeat the layering process until all ingredients are used.
  12. 12. Finish the towers with a final layer of beetroot.
  13. 13. Drizzle the finished towers with the vinaigrette.
  14. 14. Garnish the dishes with pistachios and cress.
  15. 15. Serve the towers immediately.
