🍽️ Beetroot and Apple Towers

Ingredients
- 2 green-skinned apples
- 2 tbsp lemon juice
- 4 cooked beetroots
- 4 tbsp olive oil
- 2 tbsp white balsamic vinegar
- salt
- pepper (from the mill)
- 250 g feta
- 2 tbsp peeled pistachio kernels
- 2 tbsp beetroot cress
Instructions
- 1. Wash the apples thoroughly.
- 2. Remove the core of the apples using a corer.
- 3. Slice the apples into thin rounds.
- 4. Toss the apple slices with lemon juice immediately to prevent browning.
- 5. Slice the beetroot into thin rounds as well.
- 6. Mix the oil with the vinegar in a small bowl.
- 7. Season the mixture with salt and pepper to taste.
- 8. Take four slices of beetroot and stack them on top of each other on a plate.
- 9. Sprinkle crumbled feta cheese over the beetroot layers.
- 10. Cover the cheese layer with four apple slices.
- 11. Repeat the layering process until all ingredients are used.
- 12. Finish the towers with a final layer of beetroot.
- 13. Drizzle the finished towers with the vinaigrette.
- 14. Garnish the dishes with pistachios and cress.
- 15. Serve the towers immediately.
