🍽️ Crispy Turkish Flatbread

Ingredients
- 500 g flour
- 1 cube yeast
- 250 ml lukewarm water
- salt
- flour (for the work surface)
- oil (for the baking sheet)
- 1 egg yolk
- 1 tsp sugar
- 1 tsp olive oil
- 2 tbsp sesame seeds
- 1 tsp black cumin
Instructions
- 1. Dissolve the yeast in the water.
- 2. Add the flour and the salt.
- 3. Knead everything into a smooth dough.
- 4. Punch the dough down vigorously.
- 5. Let the dough rise in a warm place for about 1 hour.
- 6. Dust your work surface with flour.
- 7. Knead the dough briefly again.
- 8. Divide the dough into two halves.
- 9. Shape each half into a ball.
- 10. Flatten the balls into round flatbreads of approx. 25 cm diameter.
- 11. Shape the edges of the flatbreads slightly puffy.
- 12. Grease a baking tray.
- 13. Place the flatbreads on the tray.
- 14. Press a diamond pattern into the flatbreads using your fingertips.
- 15. Whisk the egg yolk with the sugar.
- 16. Add the olive oil and 1 tablespoon of water.
- 17. Brush the flatbreads with the mixture.
- 18. Sprinkle the flatbreads with sesame seeds and black cumin.
- 19. Let the flatbreads rise again for approx. 15 minutes.
- 20. Preheat the oven to 220 degrees.
- 21. Bake the flatbreads in the oven for 5 minutes.
- 22. Fill a cup with water.
- 23. Open the oven door briefly.
- 24. Pour the water onto the oven floor.
- 25. Close the oven door immediately.
- 26. Bake the flatbreads for another approx. 10 minutes.
- 27. Remove the flatbreads when they are lightly browned.
- 28. Let the flatbreads cool down completely.
