  1. 1. Dissolve the yeast in the water.
  2. 2. Add the flour and the salt.
  3. 3. Knead everything into a smooth dough.
  4. 4. Punch the dough down vigorously.
  5. 5. Let the dough rise in a warm place for about 1 hour.
  6. 6. Dust your work surface with flour.
  7. 7. Knead the dough briefly again.
  8. 8. Divide the dough into two halves.
  9. 9. Shape each half into a ball.
  10. 10. Flatten the balls into round flatbreads of approx. 25 cm diameter.
  11. 11. Shape the edges of the flatbreads slightly puffy.
  12. 12. Grease a baking tray.
  13. 13. Place the flatbreads on the tray.
  14. 14. Press a diamond pattern into the flatbreads using your fingertips.
  15. 15. Whisk the egg yolk with the sugar.
  16. 16. Add the olive oil and 1 tablespoon of water.
  17. 17. Brush the flatbreads with the mixture.
  18. 18. Sprinkle the flatbreads with sesame seeds and black cumin.
  19. 19. Let the flatbreads rise again for approx. 15 minutes.
  20. 20. Preheat the oven to 220 degrees.
  21. 21. Bake the flatbreads in the oven for 5 minutes.
  22. 22. Fill a cup with water.
  23. 23. Open the oven door briefly.
  24. 24. Pour the water onto the oven floor.
  25. 25. Close the oven door immediately.
  26. 26. Bake the flatbreads for another approx. 10 minutes.
  27. 27. Remove the flatbreads when they are lightly browned.
  28. 28. Let the flatbreads cool down completely.
