🍕 Turkish Pizza with Lamb Mince, Pistachios and Dates

Ingredients
- 500 g flour
- 1 tsp sea salt
- 0.5 cube yeast (approx. 21 g)
- 1 tsp sugar
- 60 g pistachios
- 3 spring onions
- 1 clove garlic
- 8 dried dates
- 2 tomatoes
- 400 g lamb mince
- 2 tbsp tomato paste
- 1 tsp pul biber
- 1 tsp cumin (ground)
- 1 tsp allspice (ground)
- 5 tbsp olive oil
- pepper (from grinder)
- flour (for working)
Instructions
- 1. Mix the flour with the salt in a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Stir the yeast with the sugar and about 250 ml of lukewarm water.
- 4. Pour the yeast mixture into the well with the flour.
- 5. Knead everything into a smooth dough.
- 6. If necessary, add a little more flour or water until the consistency is right.
- 7. Cover the bowl.
- 8. Let the dough rise in a warm place for about 1 hour.
- 9. Roast the pistachios in a pan without fat.
- 10. Remove the pan from the heat.
- 11. Let the pistachios cool down.
- 12. Wash the spring onions.
- 13. Remove the tough ends of the spring onions.
- 14. Slice the spring onions into rings.
- 15. Peel the garlic.
- 16. Finely chop the garlic.
- 17. Finely dice the dates.
- 18. Wash the tomatoes.
- 19. Remove the stem ends from the tomatoes.
- 20. Dice the tomatoes small.
- 21. Mix the lamb mince with the tomatoes.
- 22. Add the tomato paste.
- 23. Add the spices.
- 24. Add 3 tablespoons of oil.
- 25. Salt the mixture.
- 26. Pepper the mixture.
- 27. Preheat the oven to 220°C top and bottom heat.
- 28. Knead the dough well again on a floured work surface.
- 29. Divide the dough into 8 equal balls.
- 30. Roll out the dough balls on a floured surface into round flatbreads of about 20 cm in diameter.
- 31. Place the flatbreads on a baking sheet lined with baking paper.
- 32. Top the flatbreads with the minced meat mixture.
- 33. Leave a small border around the minced meat mixture.
- 34. Bake the pizzas in the oven for 15 to 20 minutes until golden brown.
- 35. Remove the pizzas from the oven.
- 36. Let the pizzas rest for 3 to 5 minutes.
- 37. Serve the pizzas with, for example, a tomato salsa and yogurt dip.
