  1. 1. Mix the flour with the salt in a large bowl.
  2. 2. Make a well in the center of the flour mixture.
  3. 3. Stir the yeast with the sugar and about 250 ml of lukewarm water.
  4. 4. Pour the yeast mixture into the well with the flour.
  5. 5. Knead everything into a smooth dough.
  6. 6. If necessary, add a little more flour or water until the consistency is right.
  7. 7. Cover the bowl.
  8. 8. Let the dough rise in a warm place for about 1 hour.
  9. 9. Roast the pistachios in a pan without fat.
  10. 10. Remove the pan from the heat.
  11. 11. Let the pistachios cool down.
  12. 12. Wash the spring onions.
  13. 13. Remove the tough ends of the spring onions.
  14. 14. Slice the spring onions into rings.
  15. 15. Peel the garlic.
  16. 16. Finely chop the garlic.
  17. 17. Finely dice the dates.
  18. 18. Wash the tomatoes.
  19. 19. Remove the stem ends from the tomatoes.
  20. 20. Dice the tomatoes small.
  21. 21. Mix the lamb mince with the tomatoes.
  22. 22. Add the tomato paste.
  23. 23. Add the spices.
  24. 24. Add 3 tablespoons of oil.
  25. 25. Salt the mixture.
  26. 26. Pepper the mixture.
  27. 27. Preheat the oven to 220°C top and bottom heat.
  28. 28. Knead the dough well again on a floured work surface.
  29. 29. Divide the dough into 8 equal balls.
  30. 30. Roll out the dough balls on a floured surface into round flatbreads of about 20 cm in diameter.
  31. 31. Place the flatbreads on a baking sheet lined with baking paper.
  32. 32. Top the flatbreads with the minced meat mixture.
  33. 33. Leave a small border around the minced meat mixture.
  34. 34. Bake the pizzas in the oven for 15 to 20 minutes until golden brown.
  35. 35. Remove the pizzas from the oven.
  36. 36. Let the pizzas rest for 3 to 5 minutes.
  37. 37. Serve the pizzas with, for example, a tomato salsa and yogurt dip.
