  1. 1. Peel the cucumber and cut it in half lengthwise.
  2. 2. Remove the seeds using a spoon.
  3. 3. Grate the cucumber flesh coarsely.
  4. 4. Mix the grated cucumber with one teaspoon of salt.
  5. 5. Let the cucumber sit for ten minutes to release liquid.
  6. 6. Rinse the cucumber briefly and squeeze it well so it is dry.
  7. 7. Add the yogurt to the cucumber and stir everything well.
  8. 8. Peel the garlic clove and press the garlic directly into the yogurt mixture.
  9. 9. Stir in the vinegar and olive oil.
  10. 10. Season the dip to taste with a little salt.
  11. 11. Let the finished dip rest briefly so the flavors can meld.
  12. 12. Serve the dip garnished with a wedge of tomato.
  13. 13. Sprinkle some chopped chives over it.
